Cardamom Gelato
Warm spice arrives through the milk instead of sitting on top of it, the body is full and clean, and a cool resinous trail stays after the cold fades.

The Indian subcontinent is where this pairing of milk and pod comes from, and the method travelled with the flavour: whole pods bruised, steeped in hot milk, then strained out before the mix ever reaches the machine. Nothing of the spice stays in the tub, so the eight figures below belong to the milk it left through. That milk is built to hold aroma anyway, since the volatiles dissolve in fat: 45 g of whole milk powder sits alongside 14 g of the skimmed kind, and 155 g of cream brings fat to 8.75 percent, so the perfume has somewhere to live once the pods come out.
What was engineered, then, is the base the infusion runs on, and one choice in it is not decorative. This is the formula in the set that uses whole milk powder, 45 g/kg of it, alongside only 14 g/kg of skim. Cardamom aroma is 1,8-cineole and alpha-terpinyl acetate, both fat soluble, and the milk fat in whole milk powder is their solvent. Infuse in water or skim milk and the extraction drops sharply.
The rest of the base leans dairy hard: 601 g/kg of whole milk, 155 g/kg of cream, fat at 8.75% and MSNF at 10.78%, which is high inside the 8 to 12 band. Sweetness is deliberately clean and forward, 160 g/kg of sucrose and 20 g/kg of dextrose for a POD of 182.12 near the top of 135 to 200, because a spice this volatile reads better against a plainly sweet cream than against a caramel one.

Method
Loaf pan, fork every 40 minutes
- 1Whisk every dry ingredient together first: sugars, milk powder, stabiliser and salt. Dry-blending them stops the stabiliser clumping when it meets liquid.
- 2Warm the liquids to 40 C (104 F), then rain the dry mix in while whisking hard.
- 3Heat to 82 C (180 F) and hold for 2 minutes so the stabiliser hydrates.
- 4Chill in an ice bath to under 5 C (41 F) within 2 hours. Slow cooling is where bacteria and coarse crystals both start.
- 5Age 6 to 12 hours in the fridge under 5 C (41 F). This is when the stabiliser and the milk protein take up water.
- 6Freeze in a shallow metal pan 2 to 3 cm deep, breaking the crystals with a fork every 30 to 40 minutes, 4 to 6 times.
- 7Freeze firm, then temper 10 to 15 minutes in the fridge before scooping.
The balance
All six against the professional range for Milk Gelato.
MSNF at 10.78% is the highest of any base in this group, and it is chased on purpose: milk solids are what give the spice something to cling to, and a thin base makes cardamom read sharp and medicinal. The price is lactose at 9.44% of the water phase, which is the tightest sandiness margin in the set. It passes, but it is why the skim powder line stops at 14 g/kg while the whole milk powder carries the rest, since whole milk powder brings fat along with the solids instead of pure lactose. Fat at 8.75% then does double duty: it sits mid band in 5 to 12 for body, and it is the extraction solvent for the terpenes. PAC at 258.77 lands mid band in 220 to 300, so the base behaves like any well-behaved white gelato once the infusion is strained out.
Dose, from practice rather than from the ingredient table: 8 to 12 green cardamom pods per kilo of base, about 2 to 3 g of pod, equivalent to roughly 1 to 1.5 g of ground seed. Crush the pods in a mortar right before use, bring the milk slowly to the boil, take it off the heat, cover, steep 20 minutes and strain. Do not leave ground cardamom in the base: the husk is fibrous and bitter, and commercially ground powder has already lost its volatile fraction. Black cardamom is smoked and is not a substitute for green. Run the infusion in the fat fraction, whole milk plus cream, not in water or skim. And do not mature an infused base beyond 12 hours, because the profile drifts toward eucalyptus.
If it goes wrong
The infusion was run in water or skim milk. The aroma compounds are fat soluble, and this base carries 8.75% fat for exactly that reason.
Steep in the whole milk and cream fraction, 601 g and 155 g per kilo respectively, and keep the whole milk powder in the formula.
Ground powder or crushed husk left in the base instead of being strained out.
Infuse whole bruised pods and strain the milk before it goes back into the mix.
Over-maturation of an infused base, where the terpene profile keeps shifting.
