Green vs Black Cardamom in Gelato: Not Interchangeable

Green and black cardamom share a name and almost nothing else. One is a floral, citrus-lifted seed pod; the other is smoke-dried and camphoraceous. Swapping them in a gelato base does not shift the flavor a little. It replaces it. Here is what changes, and how to dose each.

Two Different Plants, Not Two Grades
The single most useful fact about this pair is that they are not the same species at different stages of processing. Green cardamom is Elettaria cardamomum, a small pale pod harvested slightly under-ripe and dried gently, usually with warm air or in the shade so the green chlorophyll survives. Black cardamom is Amomum subulatum, a much larger, ridged, dark brown pod from a different genus in the same family. In some markets a related species, Lanxangia tsaoko, is sold under the same name.
Both belong to the ginger family, Zingiberaceae, which is where the family resemblance stops. Green cardamom pods are one to two centimetres long and thin-walled; black cardamom pods are commonly two to three centimetres long, far bulkier and ridged, and look like small dried figs.
The second difference is the drying method, and for gelato it matters more than the botany. Traditional black cardamom is dried over open flame in smoking kilns. That smoke is not incidental seasoning, it is the defining processing step, and it deposits phenolic smoke compounds on and into the pod. A green cardamom pod dried the same way would also taste smoky. It simply never is.
Green cardamom is named directly in United States food law: 21 CFR 182.10 lists cardamom (cardamon), Elettaria cardamomum Maton, among the spices and natural seasonings generally recognised as safe, and 21 CFR 182.20 lists cardamom seed among the corresponding essential oils and oleoresins used as flavorings. Black cardamom is on neither list; the only Amomum named in 182.10 is grains of paradise, Amomum melegueta. Those lists enumerate specific spices rather than exhaust what is lawful to use, so the omission is not a safety finding, but it does mean you cannot cite 182.10 for black cardamom the way you can for green. Nothing in this comparison is about safety. It is about aroma.
The aroma chemistry follows the same split. Cardamom flavor lives in the volatile oil of the seed, not the papery husk. Published analyses of green cardamom seed put that volatile oil in the range of roughly three to eight percent of seed weight, which is high for a seed spice and explains why a few grams go a long way.
Two compounds dominate that oil. α-terpinyl acetate is the sweet, slightly fruity, faintly floral note most people identify as cardamom. 1,8-cineole, the same molecule that dominates eucalyptus oil, is the cooling, camphor-like lift. In good green cardamom the two sit in rough balance, with terpinyl acetate typically leading, and origin shifts the ratio: Guatemalan material tends to read more cineole-forward and eucalyptic, Indian Malabar and Alleppey material more sweet and floral.
Black cardamom inverts that balance. Its oil is heavily cineole-dominant, with the terpinyl acetate sweetness largely absent, and on top of that sits the smoke phenol layer from kiln drying. The perceptual result is a spice that reads resinous, medicinal and savory rather than dessert-sweet.
This is the whole argument in one sentence: green cardamom brings a sweet aromatic top note that a dairy base flatters, and black cardamom brings smoke and camphor that a dairy base amplifies.
What Each One Does in a Dairy Base
Both cardamom oils are lipophilic. They dissolve preferentially into the fat phase of your mix rather than the water phase, which has three practical consequences.
First, fat content changes perceived intensity. The same dose in a lean base at six percent fat and a rich base at nine percent will not taste the same, because more fat means more solvent holding the aroma and releasing it more slowly on the palate. If you move a working cardamom recipe from a milk-forward base to one with more heavy cream, expect the spice to read rounder and slightly muted, and plan to nudge the dose up rather than assume the recipe travelled.
Second, cold suppresses volatility. Gelato is served around minus 11 to minus 13 degrees Celsius, and aroma release at that temperature is a fraction of what it is at room temperature. Any spice base tasted warm will always seem stronger than the frozen product. This is a well documented feature of frozen dessert formulation, discussed in the standard reference literature on ice cream, and the practical rule is simple: taste the mix cold, from a small frozen sample, before committing a batch.
Third, and this is where black cardamom gets people, smoke phenols do not fade with time in the way delicate florals do. A green cardamom base loses aromatic top notes over a week in the cabinet. A black cardamom base does not soften; the smoke stays put and the sweet notes around it dissipate, so it drifts steadily toward ashtray.

Grind from whole pods. Pre-ground cardamom has already lost most of what you are paying for.
Dose and Infusion Method for Each
Use whole pods, crushed just before use. Pre-ground cardamom loses volatile oil continuously from the moment it is milled, and by the time a supermarket jar reaches your bench it may carry a fraction of the aroma of freshly cracked pods at the same weight. Crush the pods, discard nothing, and infuse husk and seed together.

The dose gap is the headline. Black cardamom needs roughly a quarter to a third of the green dose to reach a comparable intensity, and it punishes overshoot far more severely, because the failure mode is not "too much spice" but "tastes like a fire pit". Start at the bottom of the range and work up across batches.
Quick reference. Green cardamom at 3 to 6 g per kg with a long warm steep; black cardamom at 0.8 to 2 g per kg with a short steep and a mandatory strain. They are different species, not different grades, and there is no dose at which one substitutes for the other.

Where Black Cardamom Actually Works
None of this makes black cardamom a bad ingredient. It makes it a specialist one. It fails as a straight replacement in a sweet floral scoop and succeeds where smoke is a deliberate part of the composition.
The pairings that work share a common trait: they already contain something roasted, caramelised or bitter for the smoke to sit against. Dark chocolate is the obvious one, because cocoa carries its own roast character and enough bitterness to keep the phenols from reading as an accident. Burnt or caramelised sugar bases work for the same reason. So does anything built on toasted dairy, where a Maillard note is already established.
Black cardamom also pairs credibly with the more resinous aromatics rather than the delicate ones. It sits alongside coffee, and it can support a bitter herbal profile. What it will not do is share a scoop with jasmine, rose water or elderflower without flattening them completely. If you have built a floral base, black cardamom is not an accent, it is a demolition.
Green cardamom is the far more flexible partner. It works in a plain fior di latte style base where it is the only stated flavor, it lifts pistachio and almond, it belongs in Persian and South Asian profiles alongside saffron and rose, and it holds its own next to matcha without either one winning. Balancing Impact: Almost Nothing, and Why That Matters
Here is a number worth internalising. Cardamom is roughly ninety percent dry solids, with the bulk of that carbohydrate and a large share of it insoluble fiber. At a working dose of 4 g per kilo of mix, you are adding on the order of 3.6 g of solids to a thousand grams, or about 0.36 percentage points of total solids.
That is inside the noise of your scale. It moves PAC and POD by an amount you cannot measure and would not taste. So the balancing conclusion is that cardamom, either colour, is a flavoring and not a formulation ingredient. Build the base first, get the solids and freezing behaviour where you want them using the standard balancing method, then add the spice on top without recalculating.
The exception is if you strain and lose liquid. A long steep in a saucepan with the lid off can evaporate several percent of your water, which absolutely does move the balance, and straining through a fine mesh leaves some mix behind in the solids. Weigh the mix before and after infusion. If it lost mass, top back up with water, not milk, or you will have quietly raised the solids on yourself.

Four Mistakes Worth Avoiding
Substituting by weight. The single most common error. A recipe calling for 5 g of green cardamom does not become a black cardamom recipe at 5 g. It becomes inedible.
Using pre-ground. Both spices lose volatile oil steadily once milled. Buy whole pods, crack them at the bench, and you will need less material for a stronger result.
Leaving black cardamom husks in the mix. Green cardamom husk is mild enough that an unstrained base is a defensible choice. Black cardamom husk carries the heaviest concentration of smoke phenols and keeps extracting during ageing, so an unstrained black cardamom base gets stronger overnight in the wrong direction. Strain it.
Tasting warm and trusting it. A warm mix reads far more aromatic than the frozen scoop will. Freeze a spoonful, taste it cold, then decide. This applies to every spice, and it is the discipline that separates a repeatable spice base from a lucky one. A pinch of salt in the base also sharpens the aromatic edge and is worth adding before you reach for more spice.
