Cardamom Gelato Recipe: Warm, Fragrant Italian Scoop

Cardamom is among the most expensive spices a gelateria will ever weigh out, and the most commonly wasted. Its aroma lives in a volatile oil that boils away in the pasteuriser. Get the infusion window right and 14 g of pods flavours a whole kilo.


What cardamom actually tastes of
Green cardamom is the seed of Elettaria cardamomum, a member of the ginger family native to the Western Ghats of southern India, though Guatemala has been the largest producer for decades. It is not interchangeable with black cardamom, Amomum subulatum, which is a different genus, dried over open fire, and tastes of smoke and camphor. Buy the wrong one and no amount of dosing corrects it.
The aroma sits almost entirely in a volatile oil concentrated in the seed. The husk carries very little, which is the single most useful fact in this recipe: it explains why whole pods are the right format to buy, why they have to be cracked before use, and why ground cardamom off a supermarket shelf tastes of nothing much.
Two compounds dominate that oil. 1,8-cineole, the same molecule that gives eucalyptus its bite, supplies the cooling, camphoraceous edge. α-terpinyl acetate supplies the sweet, floral, faintly fruity half. Their ratio shifts with origin: Indian cardamom generally leans towards the sweet, floral side, Guatemalan towards the eucalyptus side. Neither is better, but they are not the same ingredient, and if a batch tastes medicinal rather than perfumed the origin is worth checking before the dose is.
Both compounds are terpenes, which matters practically in two ways. They are volatile, so open heat drives them off. And they are more soluble in fat than in water, so a milk-and-cream base extracts them far better than a water infusion would.
Quick reference. Buy whole green pods, crack them, and infuse in the fat-bearing part of the mix below boiling. Ground cardamom and long boils both destroy the thing you paid for.

The base, per 1000 g
This is a straightforward white base, close to a fior di latte, tuned slightly drier and slightly less sweet than usual so the spice has room.

Cardamom, separately: 14 g of whole green pods, roughly 60 to 70 pods, cracked. They are strained out, so they do not count towards the 1000 g.
That base lands at about 6.5% fat, 10.5% MSNF, 18.2% added sugars and 35.6% total solids, with a PAC near 25 and a POD near 17 per 100 g of mix. The cream is doing double duty. At 120 g it lifts fat to 6.5%, which is where a spice gelato wants to sit: enough fat to dissolve and carry the terpenes, not so much that it coats the palate and flattens them. Push it past about 9% and the cardamom goes muffled.
The 28 g of dextrose is the usual trade described in sucrose versus dextrose, buying freezing-point depression at three-quarters the sweetness cost. The dried glucose syrup at DE38 adds solids and a little chew while barely touching PAC. Build the gum blend from the ratios in the stabiliser blend recipe rather than buying a pre-mix if you want to control the body.
Buying and preparing the pods
Buy whole pods, green and plump, never ground and never the bleached white ones sold for baking. A pod that rattles loudly when shaken has dried out and lost oil. Good pods feel slightly resistant and smell strongly through the bag.
Crack every pod before use. Press each one under the flat of a knife until the husk splits; you want the seeds exposed but not powdered. Powdered seed releases its oil immediately into the air rather than into the milk, and it also releases the tannic, slightly bitter fraction that makes an over-infused batch taste soapy.
Do not discard the husks. They contribute almost no aroma but they add bulk that keeps the seeds suspended and easy to strain out later.
Fourteen grams per kilo is the working dose for a clearly cardamom gelato that still reads as gelato. The dose is not linear with intensity, because the bitter fraction extracts faster than the aromatic one past a certain loading.

Weigh the pods rather than counting them. Pod size varies by a factor of two between grades, and a recipe written in spoonfuls will be wrong by half in either direction.

The infusion: temperature, time and when to strain
There are three defensible ways to do this, and the diagram above compares them. All three assume the pods go into the milk and cream, never into water.
Hot steep, off the heat, 20 minutes. Heat the milk, cream and cracked pods together, take the pot off the heat at 80 °C, cover, and leave for 20 minutes before straining and continuing. Fastest, cleanest, and the one to use if you are making the gelato the same day. It extracts most of the terpinyl acetate and a moderate amount of the cineole.
Warm steep, two hours at 55 to 60 °C. Slower and noticeably rounder. A low, held temperature extracts more total oil without driving the volatiles off, and the result is fuller but less bright. This is the professional choice when a pasteuriser can hold temperature unattended.
Cold steep, overnight at 4 °C. Put the cracked pods into the cold milk and cream and leave them in the fridge for 12 hours before building the mix. Extraction is slow and incomplete, so raise the dose to 20 g, but almost nothing volatile is lost. The result is the most delicate of the three and the least bitter.
Whichever you pick, strain before pasteurising, not after. Leaving pods in through the hold and the ageing step is the most common way to end up with a bitter, tannic gelato, and it is not recoverable.
Strain through a fine mesh sieve, then press the spent pods gently against it with the back of a spoon. Gently is the operative word. Hard pressing squeezes out the husk fraction along with the last of the oil, and the husk is where the astringency lives.
One temptation worth resisting: adding a few drops of cardamom essential oil or extract to reinforce a weak infusion. It reads as artificial almost immediately, because a distilled oil carries the cineole fraction far out of proportion to everything else that was in the pod. A weak batch is better fixed by re-running the infusion with fresher pods than by dosing an extract into a finished mix.

Making and churning the mix
Blend the milk powder, sugars, dried glucose, gums and salt together dry, then whisk that blend into the cold, already-infused and strained dairy. Gums dropped into hot liquid lump instantly and never fully recover.
Heat to 68.3 °C and hold for 30 minutes, or 79.4 °C for 25 seconds if you prefer the short cycle. Those are the pasteurisation equivalences 21 CFR 135.3 sets for frozen dessert mixes, and they are the targets a professional pasteuriser is programmed with. Do not let the mix boil: milk proteins scorch on the base of the pan and the flavour is unrecoverable.
Chill hard, ice bath, down to 4 °C inside 90 minutes. Then age at 4 °C for at least four hours and ideally overnight. Ageing hydrates the gums and lets the milk fat crystallise, and in a spice gelato it does one more thing: it lets the remaining aroma redistribute evenly through the fat phase. Churn in a mantecatore to a draw temperature of about −8 °C. Colder than that and the batch comes out of the machine dry; warmer and it will not hold in the case. Cardamom pairs on two axes. Against other resinous, warm aromatics it compounds: a small saffron accent works, and the balancing logic for that is in the saffron gelato recipe. One last note on ordering. If you are folding anything in, do it at the end of churning, never in the mix. Cardamom's aroma is already fighting to survive one heat cycle; it should not have to survive two.
