Dairy-Free Almond Milk Gelato
Nutty and clean rather than creamy, sweet at the front and dry at the finish, with the almond holding on well after the cold has left the tongue.

Sicily drinks its almonds long before it freezes them. Latte di mandorla is almond, water and sugar, pressed cold, with no dairy anywhere in it, and the frozen version has no business pretending otherwise. That is why this sheet sits in the vegan band and reads MSNF of zero, and why the paste climbs to 155 g per kilo where a milk version would stop at 80 to 100. With no cream to lean on, the nut has to supply everything: at that weight it gives 8.5 per cent fat, the body and the flavour, while protein closes at 3.28 per cent and stays under the vegan ceiling.
The dose is where the decision shows. At 155 g of pure almond paste per kilo it runs far above the 80 to 100 g used when there is milk in the mix, and that gap is the whole point: with no dairy, the almond has to supply all the fat and all the body. At roughly 55 percent fat, 155 g delivers 8.53 percent fat, inside the vegan window of 8 to 13, without a drop of added coconut oil, which keeps the Sicilian original intact.
The ceiling is protein. Almond is about 21 percent protein and the vegan base caps out at 3.5 percent, and this sheet reads 3.28 percent, close enough that 180 or 200 g of paste would simply fail. Sugars run at 20.81 percent inside an 18 to 24 window because without MSNF the sugars are almost the only solids steering PAC, which is why 60 g of glucose powder and 30 g of inulin are in the list: they add dry extract without adding much antifreeze.

Method
Blitz and refreeze
- 1Whisk every dry ingredient together first: sugars, milk powder, stabiliser and salt. Dry-blending them stops the stabiliser clumping when it meets liquid.
- 2Warm the liquids to 40 C (104 F), then rain the dry mix in while whisking hard.
- 3Heat to 82 C (180 F) and hold for 2 minutes so the stabiliser hydrates.
- 4Off the heat, whisk in the paste, then blend 60 seconds so the fat emulsifies instead of separating.
- 5Chill in an ice bath to under 5 C (41 F) within 2 hours. Slow cooling is where bacteria and coarse crystals both start.
- 6Age 6 to 12 hours in the fridge under 5 C (41 F). This is when the stabiliser and the milk protein take up water.
- 7Freeze in a shallow metal pan 2 to 3 cm deep, breaking the crystals with a fork every 30 to 40 minutes, 4 to 6 times.
- 8Freeze firm, then temper 10 to 15 minutes in the fridge before scooping.
The balance
All six against the professional range for Vegan Base.
Two numbers are pressed against opposite walls, and that is the shape of every dairy free nut base. Fat at 8.53 percent sits barely above its 8 percent floor, so the almond cannot be reduced. Protein at 3.28 percent sits just under its 3.5 percent ceiling, so the almond cannot be increased. The paste is therefore locked at 155 g, and every other lever has to work around it: sugars at 20.81 percent inside 18 to 24, solids at 38.3 percent against a 35 percent floor, water at 61.7 percent inside 58 to 65. PAC at 253.48 sits a little under the middle of 210 to 300, which matters more here than in a dairy recipe, because there is no milk fat to fake softness if the mix freezes too hard. Lactose is zero, so the usual sandiness check is not the risk on this sheet.
Specific to this one: with no milk protein there is no natural emulsifier, so mechanical homogenisation is not optional. Blend with an immersion blender for 2 to 3 minutes at 60 to 65 C, otherwise the almond oil separates and rises during ageing. Use blanched white paste, not toasted, since latte di mandorla is a delicate floral flavour and toasted almond turns it into a different product. This is a water only base, with no plant drink behind it, so the 4 g of carob seed flour is the entire hydrocolloid structure and the 12 hour age at 4 C is mandatory: at 6 hours the mix comes out with coarse crystals. Pasteurise water, sugars and carob at 82 to 85 C for 30 seconds and add the paste only as it cools. Sandiness here does not come from lactose, there is none, it comes from free water, so never drop the solids below 35 percent. Allergen: almond. There is no acid in the sheet, so there is no curdling risk.
If it goes wrong
Without dairy protein nothing is holding the emulsion. The paste was stirred in rather than homogenised.
Blend with an immersion blender for 2 to 3 minutes at 60 to 65 C before chilling, and give it a short second blend at the end of ageing.
Short ageing. With 4 g of carob seed flour as the only structure, 6 hours does not hydrate it, or the solids were diluted below the 35 percent floor.
Age a full 12 hours at 4 C, and do not add water beyond the 600 g on the list, which already puts water at 61.7 percent.
Toasted almond paste was used in place of blanched white paste.
Switch to blanched white almond paste. The dose stays at 155 g, only the raw material changes.
