Almond Milk Gelato: Balancing a Lean, Nutty Vegan Base

A carton of almond drink is roughly 97% water. Pour it into a gelato mix expecting almond flavour and body and you will get neither. The Sicilians solved this two centuries before the cartons existed, and their answer still works.

What Commercial Almond Milk Actually Contains
Quick reference. Typical unsweetened almond drink carries about 1.2 g fat, 0.6 g protein and 0.3 g sugar per 100 g, because most commercial products are only 2 to 4% almonds by weight. It is flavoured water. Treat it as your water phase, not as an ingredient that builds structure.

Raw almonds are nutritionally dense: roughly 50% fat and 21% protein by weight (USDA FoodData Central). That is a formidable ingredient. The problem is what happens on the way to a carton. Most commercial almond drinks are built from 2 to 4% almonds, with the rest water, a gum or two and often added calcium. What arrives on your bench is a liquid with roughly a third the fat of whole milk and less protein than oat milk.
This is the opposite of the soy situation. Soy at least brings protein. Almond drink brings essentially nothing you can build on: not fat, not protein, not sugar, not the viscosity that beta-glucan gives oat. If your recipe says "almond milk" and produces a thin, icy result, this is why, and no amount of stabilizer will rescue it.
The Sicilian Way: Paste, Not Cartons
Gelato alla mandorla has genuine Italian heritage, and it predates industrial plant drinks entirely. The Sicilian tradition builds latte di mandorla by grinding almonds and extracting them into water at a serious ratio, commonly around one part almonds to four parts water, which lands near 20% almonds rather than 3%. Ground at that ratio the slurry works out to roughly 10% fat and 4% protein from the whole nut (USDA FoodData Central); straining pulls that down, since part of both leaves with the pomace. Either way it is a real ingredient, an order of magnitude denser than a carton. Sicily's prized Avola cultivars are grown specifically for this kind of use.
For a production bench, the practical route is almond paste rather than home-extracting milk. Paste gives you exact control over how much nut solid enters the mix, it does not vary batch to batch the way an extraction does, and it keeps the almond fat and protein in the mix instead of leaving them in a discarded pomace. The honest formulation summary: use almond drink for its water and its faint aroma if you like, but let paste do the structural work.

Building Fat That Actually Freezes
Almond fat is about 62% oleic acid and 24% linoleic, so it is overwhelmingly unsaturated (USDA FoodData Central). Like soybean oil, it stays essentially liquid at the -6 to -9 °C draw temperature of a batch freezer. Milk fat behaves differently: its broad melting range leaves a fraction crystalline at those temperatures, and those crystals drive the partial coalescence that builds dry, stiff, slow-melting structure (Marshall, Goff and Hartel, Ice Cream).
So an all-almond fat base is soft and fast-melting by construction. The correction is the same one that rescues every lean plant base: bring in a solid fat. Refined coconut oil is roughly 90% saturated and melts near 24 to 26 °C, so it is fully solid where it matters. Replacing 2 to 3% of the mix with it, on top of the paste's own fat, restores the network without pushing a coconut note into the flavour.

Sugars, Solids and the Missing Lactose
Dropping dairy removes lactose, and lactose was doing quiet work on the freezing curve. Lactose and sucrose share the same molar mass of 342.3 g/mol, so they depress the freezing point identically per gram. Since lactose is roughly 54% of MSNF, a mix at 10% MSNF was carrying about 5.4% of sucrose-equivalent sugar before the sugar bill even started.
Remove that and keep the same added sugars and the base freezes hard. Correct it by raising PAC faster than POD: shift part of the sucrose to dextrose and inverted sugar, both of which depress the freezing point far more per gram than sucrose while adding less perceived sweetness per unit of effect.
A workable starting point for an almond base: total solids around 38%, fat about 9%, sugars around 17% with roughly 4% dextrose and 3% inverted sugar, and stabilizer at 0.40 to 0.50%. That stabilizer dose sits above the dairy default deliberately, because unlike soy there is no meaningful protein helping to hold air. Aroma: Where Almond Flavour Really Comes From
The scent people call "almond" is benzaldehyde, and sweet almonds contain very little of it. It forms when amygdalin, a cyanogenic glycoside concentrated in bitter almonds and apricot kernels, is hydrolysed. This is why traditional Sicilian pastry sometimes blends a small fraction of bitter almonds or armelline into an otherwise sweet almond paste: it is aroma engineering, not adulteration.
It also needs care. EFSA's 2016 opinion on cyanogenic glycosides in apricot kernels set an acute reference dose of 20 µg of cyanide per kg of body weight, so bitter kernels belong in trace proportions with a supplier specification, never by eye. If you want the aroma without the risk management, a food-grade natural benzaldehyde flavouring does the same job predictably.
Allergens and Labeling
Almond is a tree nut, which makes it a declarable allergen in both major markets: tree nuts are among the major allergens under US FALCPA rules and appear in Annex II of EU Regulation 1169/2011. Cross-contact through a shared batch freezer or a shared spatula is a genuine hazard, so review your allergen labeling and cleaning protocols before adding a nut line.
On naming, the EU reserves "milk" for dairy under Regulation 1308/2013, confirmed by the Court of Justice in the TofuTown case (C-422/16, 2017), so European menus need "almond drink" or latte di mandorla used in its traditional culinary sense rather than as a dairy claim. In the US, FDA draft guidance from 2023 permits "almond milk". Neither market lets you call the finished product ice cream: 21 CFR 135.110 requires at least 10% milkfat.
