Vegan Chocolate Gelato

Thick and slow to melt for something with no dairy in it: bitter cocoa first, then a low coconut warmth that fills in behind and stays on the palate.

Body registers before flavour does. Fat closes at 10.48 percent and coats the palate the way a dairy base would, which is the coconut milk doing its half of the work while the soy milk quietly supplies the protein. The cocoa comes next, dark and dry at the edges, and it stays dry because there is no casein here to soften the tannin; that is exactly why the 70 percent couverture stops at 90 g per kilo where a milk version would take 130, since more would read as chalk. Underneath sits a coconut warmth that never announces itself as coconut, and the finish runs long, held there by 14 g of inulin keeping the body from thinning as it melts.

The chocolate side is 90 g of 70 percent couverture plus 30 g of cocoa powder, and the 90 g is deliberately below the 130 g a dairy version of this flavour would carry. Casein binds tannin. With no casein in the pot, the astringency of a 70 percent has nothing to hide behind, and a bigger dose reads as dry rather than as intense. The cocoa powder earns its place twice over: flavour, and roughly 6 g of protein per kilo, which counts for something when the floor is 1.5 percent.

MSNF reads 0.00 against a 0 to 1 band. That is the honest consequence of a vegan base and also its structural problem, because there are no milk solids non fat holding water. The 14 g of inulin stands in for them, binding free water and giving body without adding sugar or protein. Sugar is 105 g sucrose and 60 g dextrose, closing at 19.68 percent sugars, POD 180.56 under a 195 ceiling and PAC 254.64 in a 210 to 300 band.

Method

Cocoa dispersed dry, soy milk taken to 78 C, coconut and couverture off the heat, aged 12 hours

  1. 1Whisk every dry ingredient together first: sugars, milk powder, stabiliser and salt. Dry-blending them stops the stabiliser clumping when it meets liquid.
  2. 2Warm the liquids to 40 C (104 F), then rain the dry mix in while whisking hard.
  3. 3Heat to 82 C (180 F) and hold for 2 minutes so the stabiliser hydrates.
  4. 4Melt the chocolate to 45 C (113 F) and stir it into the hot base off the heat, then blend 60 seconds until glossy.
  5. 5Chill in an ice bath to under 5 C (41 F) within 2 hours. Slow cooling is where bacteria and coarse crystals both start.
  6. 6Age 6 to 12 hours in the fridge under 5 C (41 F). This is when the stabiliser and the milk protein take up water.
  7. 7Freeze in a shallow metal pan 2 to 3 cm deep, breaking the crystals with a fork every 30 to 40 minutes, 4 to 6 times.
  8. 8Freeze firm, then temper 10 to 15 minutes in the fridge before scooping.

The ratio between the two plant milks is the whole balance, and two indicators pin it. Protein at 2.51 percent against a 1.5 floor is what keeps 203 g of soy milk in the recipe: cut it and the base falls under the floor and loses the little protein it has for holding air, so it comes out of the freezer dense. Fat at 10.48 percent against a 13 ceiling is what caps the coconut milk at 283 g, because coconut milk runs around 21 percent fat and every extra 50 g moves fat about a point, and past the ceiling coconut fat reads waxy rather than creamy. PAC 254.64 sits mid band, so the mix firms at a workable rate in a domestic freezer instead of setting solid. MSNF at 0.00 is why the 14 g of inulin is not optional: it is the only thing in the recipe holding free water.

Technique note

Check the couverture before anything else. Plenty of commercial 70 percent bars carry anhydrous milk fat, and if yours does, the recipe stops being vegan without a single number in the balance changing. Soy milk is the fragile part of the pot: it flocculates against acid and against fast heat, so work over a water bath or on low heat with constant stirring and put nothing acidic in. Coconut milk splits into fat and serum if it boils, so hold pasteurising at 75 to 80 C. Order matters here. Disperse the cocoa powder, the sugars and the inulin dry, hydrate them in warm soy milk, take the base to 78 C, pull it off the heat, then add the coconut milk and the chopped couverture and blend hot for 2 minutes. The 12 hour age at 4 C is not a formality on this one: coconut fat crystallises hard and high, and the rest is what settles the emulsion and stops the gelato freezing brittle.

If it goes wrong

The base looks grainy or curdled before it ever reaches the freezer, and blending does not bring it back.

The soy milk was heated too fast or met something acidic. Soy protein flocculates and the change is permanent.

Hydrate the dry mix in warm soy milk and climb slowly to 78 C over a water bath, stirring throughout. Add nothing acidic to this base at any point.

Straight from the freezer it is brittle and shatters under the scoop instead of yielding.

The 12 hour age was skipped. Coconut fat crystallises hard, and without resting time the emulsion never sets properly around those crystals.

Hold the base 12 hours at 4 C before freezing. If it still comes out hard, the fault is the age and not the sugar side: PAC 254.64 is already mid band.

It tastes dry and astringent and grips the roof of the mouth.

The couverture went above 90 g. With no casein binding the tannins, a 70 percent chocolate shows all of its astringency.

Keep couverture at 90 g and take any extra chocolate intensity from the 30 g of cocoa powder instead, which brings colour and bitterness without the same tannin load.
