Bend a pod before you pay for it. It should curve without snapping and smell oily rather than woody, because a brittle one has already given up most of what it costs. On the bottle, the list wants to read vanilla, alcohol and water and nothing else; anything leaning on flavouring, or on vanillin alone, has nowhere to hide in a base this plain. Both forms earn their keep here, 6 g of pod for the seeds and the smaller aromatics, 8 g of pure extract for depth, over 180 g of cream and 45 g of skim milk powder that put MSNF at 10.45 percent.

The advantage is a blank canvas: with no ingredient forcing the balance, 160 g of sucrose and 20 g of dextrose can be placed purely to land PAC at 259.94, and the milk to cream ratio can be chosen purely for texture, giving 8.4 percent fat off 180 g of cream. The risk is that with no carrier ingredient every texture fault is exposed, so this recipe depends on MSNF more than any other here. It reads 10.45 percent, the top of the group, with 45 g of skim milk powder doing the body work that yolk does in the custard version.

Using pod and extract together is a technical choice, not redundancy. The pod delivers vanillin plus hundreds of smaller volatiles and the visible seeds; the extract delivers vanillin in an alcohol base that distributes into the water phase and survives freezing better. Salt at 1 g per kilo amplifies both the perceived sweetness and the vanilla itself.

Method

Hot pod infusion, fork-broken freeze

  1. 1Whisk every dry ingredient together first: sugars, milk powder, stabiliser and salt. Dry-blending them stops the stabiliser clumping when it meets liquid.
  2. 2Warm the liquids to 40 C (104 F), then rain the dry mix in while whisking hard.
  3. 3Heat to 82 C (180 F) and hold for 2 minutes so the stabiliser hydrates.
  4. 4Chill in an ice bath to under 5 C (41 F) within 2 hours. Slow cooling is where bacteria and coarse crystals both start.
  5. 5Age 6 to 12 hours in the fridge under 5 C (41 F). This is when the stabiliser and the milk protein take up water.
  6. 6Freeze in a shallow metal pan 2 to 3 cm deep, breaking the crystals with a fork every 30 to 40 minutes, 4 to 6 times.
  7. 7Freeze firm, then temper 10 to 15 minutes in the fridge before scooping.

MSNF 10.45 percent is the number that defines this base. It sits high in the 8 to 12 window because there is no yolk and no paste to build structure with, and it is what stops an eggless vanilla from tasting watery. The cost is lactose at 9.17 percent of the water, the highest of the milk gelati here, which still clears the sandiness check but leaves no headroom: adding more powder is the single easiest way to ruin this recipe. POD 184.36 is the top of the group and is carried mostly by the 160 g of sucrose, while only 20 g of dextrose is needed because PAC still lands at 259.94, mid window in 220 to 300. Fat 8.4 percent from 180 g of cream and total solids 37.89 percent both sit mid range, which is deliberate: nothing in an eggless vanilla should be at an extreme.

Technique note

Vanillin is fat soluble, so infuse the split and scraped pod in the milk and cream, never in water. Do it hot with a rest: take the mix to 80 to 85 C, cover it, and leave it 30 to 60 minutes before finishing pasteurisation. Do not boil the extract; alcohol drags the volatiles with it, so the 8 g goes in once the base is below 40 C. Take the pod out before churning, and consider putting the same pod back in during the 12 hour cold age, which lifts the light volatiles without adding bitterness. Because there is no acid, no colour and no particle in this recipe, any crystallisation fault is immediately visible, so get the base to 4 C within 2 hours to avoid lactose recrystallising.
