Sicilian Cannoli Gelato
A savoury tang runs under the sweetness, orange peel and cinnamon just behind it, and chocolate and biscuit break the smoothness every second spoon.

Sicilian practice is specific about which ricotta belongs in the filling, and it is sheep rather than cow: fatter, more savoury, and the reason the sweetness here never reads as sugared cheese. A cannolo is that cream plus a fried shell and almost nothing else, so the ricotta climbs to 200 g per kilo instead of sitting as one component among five. At that dose it hands the mix roughly 28.8 g of MSNF on its own, which is why the skim milk powder line is a trim at 14 g rather than a structural lever. Orange zest at 6 g and cinnamon at 2 g carry the aromatics, and the chocolate and biscuit give the spoon something to break against.
Two hundred grams is also close to the ceiling. Protein closes at 4.69 percent in a 3 to 5 band, and at 220 g per kilo it goes past 4.9 and the balance starts running pinned against its own limit. The choice of sheep ricotta rather than cow is precision rather than romance: it is fatter and more savoury, the traditional Sicilian recipe is explicit about it, and the two are separate entries in the ingredient table, so the number on this sheet is the sheep version.
The rest of the cannolo has been reconstructed piece by piece. 35 g of 70 percent chocolate stands in for the chips. 6 g of orange zest is the citrus signature of a Sicilian crema. 2 g of cinnamon sits near the aromatic floor, with about 3 g per kilo as the ceiling before the tannins dry the mouth and start fighting the lactose. And 30 g of ladyfinger biscuit replaces the fried scorza: it does not reproduce frying, but it does reproduce the sweet cereal and wheat protein that read as baked pastry. Thirteen ingredients in all, and fat still closes at 8.51 percent with PAC at 258.70.

Method
Cinnamon and zest infused hot and strained, ricotta folded in under 8 C
- 1Whisk every dry ingredient together first: sugars, milk powder, stabiliser and salt. Dry-blending them stops the stabiliser clumping when it meets liquid.
- 2Warm the liquids to 40 C (104 F), then rain the dry mix in while whisking hard.
- 3Heat to 82 C (180 F) and hold for 2 minutes so the stabiliser hydrates.
- 4Melt the chocolate to 45 C (113 F) and stir it into the hot base off the heat, then blend 60 seconds until glossy.
- 5Chill in an ice bath to under 5 C (41 F) within 2 hours. Slow cooling is where bacteria and coarse crystals both start.
- 6Age 6 to 12 hours in the fridge under 5 C (41 F). This is when the stabiliser and the milk protein take up water.
- 7Freeze in a shallow metal pan 2 to 3 cm deep, breaking the crystals with a fork every 30 to 40 minutes, 4 to 6 times.
- 8Freeze firm, then temper 10 to 15 minutes in the fridge before scooping.
The balance

Protein at 4.69 percent is the number that sets the recipe. Sheep ricotta at 200 g per kilo puts roughly 19 g of protein in on its own, and that is what fixes the ricotta dose, caps the skim milk powder at 14 g and rules out going any higher on the ricotta without the balance pinning. MSNF lands at 8.82 percent in an 8 to 12 band, again mostly ricotta rather than milk powder. Fat is the surprise at 8.51 percent: sheep ricotta reads as rich but at 11.5 percent fat it only contributes about 23 g to the kilo, which is exactly why there is still 85 g of cream on the list and room left under the 12 percent ceiling. PAC 258.70 and solids 38.08 both sit mid band, so the density this flavour wants, thick and low overrun, comes from how you churn it rather than from a stiff sheet.
The rule that matters most is that ricotta never gets pasteurised, and it matters more here than in a cassata because the dose is larger. Drain it 24 to 48 hours under a weight in the fridge, push it through a sieve, and fold it in cold once the pasteurised mix is below 8 C. The cinnamon goes the other way: infuse the 2 g in the hot milk during pasteurising rather than dusting it in at ageing, or it stays gritty and never releases its cinnamaldehyde. Orange zest also goes into the hot infusion and comes out by straining before cooling, which extracts the oil without leaving bitter white pith behind. Ricotta sits at pH 5.8 to 6.2, so it will not curdle a cold mix, but a high speed blender run for too long breaks the casein gel and produces a grainy texture that has nothing to do with lactose. Use 10 second pulses. Freeze fast and keep overrun low, 30 to 35 percent, because a cannolo is supposed to be dense.
If it goes wrong
The ricotta went in wet. At 200 g per kilo it is a fifth of the recipe, so its whey is a large amount of free water arriving after the balance was already closed.
Drain the ricotta 24 to 48 hours under a weight in the fridge and weigh the 200 g after draining, not before.
The ricotta was over-blended. Sustained high speed breaks the casein gel and the protein reaggregates into perceptible particles.
Fold the sieved ricotta in by hand or with 10 second pulses, and stop as soon as it is homogeneous.
Both aromatics were added cold. Cinnamon powder needs hot infusion to release cinnamaldehyde, and zest left in through cooling leaches pith bitterness.
Infuse the 2 g of cinnamon and the 6 g of zest in the hot milk during pasteurising, then strain the zest out before the ice bath.
