Pumpkin Spice Gelato

The tin is where this recipe is won or lost. Two products sit side by side on the shelf and only one says pumpkin and nothing else; the other is pie filling, already sweetened and already spiced, which takes the spicing out of your hands and the sugar out of the balance. Even the honest tin is only about 10 percent solids, so 180 g per kilo brings roughly 162 g of water with it, and that is why the sheet runs on a milk and fruit base, where the MSNF floor drops to 6 percent and the mix still closes at 8.87. The spicing then stays yours: 4 g of cinnamon, 2 g of nutmeg and 30 g of muscovado.

The tightest number here is POD, at 188.72 against a 200 ceiling. That is why there is only 15 g of dextrose: there was no room left above. The 30 g of muscovado is not sitting in the sugar budget by accident either. Molasses is the note that turns squash into pie, and with POD 96 and PAC 99 muscovado sweetens and antifreezes almost exactly like sucrose, so the solver simply took the same weight off the sucrose line. Sucrose ends at 135 g and total sugars at 18.39 percent inside a 17 to 22 window.

The spice is 4 g of cinnamon to 2 g of nutmeg, and it is worth being straight about what that is. Ginger and clove are not in the ingredient set this recipe was balanced against, so this is a two spice pumpkin spice rather than the four spice blend. Fat comes entirely from 130 g of cream and closes at 6.31 percent, mid band in 4 to 8.5, which leaves the squash and the molasses out front instead of buried under dairy.

Method

Puree pasteurised with the base, aged cold, then tray frozen with a fork

  1. 1Whisk every dry ingredient together first: sugars, milk powder, stabiliser and salt. Dry-blending them stops the stabiliser clumping when it meets liquid.
  2. 2Warm the liquids to 40 C (104 F), then rain the dry mix in while whisking hard.
  3. 3Heat to 82 C (180 F) and hold for 2 minutes so the stabiliser hydrates.
  4. 4Chill in an ice bath to under 5 C (41 F) within 2 hours. Slow cooling is where bacteria and coarse crystals both start.
  5. 5Age 6 to 12 hours in the fridge under 5 C (41 F). This is when the stabiliser and the milk protein take up water.
  6. 6Freeze in a shallow metal pan 2 to 3 cm deep, breaking the crystals with a fork every 30 to 40 minutes, 4 to 6 times.
  7. 7Freeze firm, then temper 10 to 15 minutes in the fridge before scooping.

Two numbers set the shape of this sheet. MSNF at 8.87 percent is comfortable on a 6 to 10 band but would have been a struggle on a milk base asking for 8 as a floor, and that single fact is what put the recipe on the milk and fruit type. POD at 188.72 against a 200 ceiling is the other one: it is nearly spent, which is why the sugar work had to be done with muscovado replacing sucrose gram for gram rather than by adding anything on top. Around those two, water sits at 64.27 percent in a 57 to 67 range, so the fruit dose is close to its practical limit, and PAC at 255.06 in a 220 to 300 band is what lets the tub stay diggable at domestic freezer temperature. Lactose reads 4.83 percent of the mix and 7.52 percent of the water, which clears the sandiness check with room to spare.

Technique note

Pumpkin is a vegetable, not a fruit puree you fold in cold. It sits around pH 5 and carries a vegetable microbial load, so it goes into the mix before pasteurisation and takes the heat treatment with everything else. Never add it raw at the end. The puree also brings starch and pectin, which swell while hot, so the viscosity you see coming off the heat is not the body you will get. Judge the texture only after ageing at 4 C. Do not brighten it with lemon: the carotenoid colour is heat and light stable and needs no help, and with MSNF at 8.87 percent an acid drop at that pH will flocculate casein. Nutmeg is 36 percent fat and extremely potent, so weigh the 2 g rather than eyeballing it, and grate it fresh. Pre ground nutmeg loses myristicin within weeks and tastes flat and dusty.

If it goes wrong

The mix looks thick and glossy coming off the heat, then feels thin the next day.

Pumpkin starch and pectin swell while the base is hot and relax again as it cools. The hot viscosity is not the finished body.

Judge body only after the base has aged at 4 C. Do not add extra stabiliser at the hot stage on the strength of what you saw in the pan.

White specks and a slightly curdled look after the puree goes in.

Acid met casein. Usually a squeeze of lemon added to lift the flavour, sometimes a very acidic squash.

Leave the citrus out. With MSNF at 8.87 percent there is plenty of casein to lose, and the colour does not need acid to hold.

A medicinal, almost camphor edge behind the spice.

Nutmeg past the 2 g on the sheet, or ground nutmeg that has gone stale and dusty.

Weigh 2 g of nutmeg against 4 g of cinnamon and grate it from the whole nut on the day.
