Melon Sorbet
It scoops dense instead of icy, carries a ripe perfume that survives the cold, and finishes on a lemon lift that keeps the whole thing from going flat.

Home versions of this come out as sweet ice with a vague green note somewhere behind it, and the reason is arithmetic: the fruit is 90 percent water and 10 percent solids, so half a kilo of it per kilo of sorbetto is mostly water, and water freezes into crystals you can feel on the tongue. Glucose powder, dextrose and a little maltodextrin put those missing solids back and take PAC to 321.5, which is what makes the set fine-grained. The second correction is acid. Ripe melon sits near neutral, pH 6.0 to 6.7, and without the 20 g of lemon the whole thing reads flat and faintly soapy.
Because the fruit is locked, the rest of the sheet has to carry the structure. 90 g of glucose powder and 35 g of maltodextrin buy dry matter that adds almost no sweetness, and that is how solids reach 31.21 percent inside a 27 to 35 range while sugars stop at 29.84 against a 32 ceiling. POD reads 209.62 in a 175 to 240 band and PAC 321.48 in 275 to 375. The 207 g of water is what brings the whole thing back to a kilo.
The 20 g of squeezed lemon juice is a large acid correction by sorbetto standards, and ripe melon is why. Its pH sits between 6.0 and 6.7, close to neutral, and without acid the finished sorbetto reads flat and faintly soapy rather than fresh. The stabiliser is guar gum, 3 g, rather than a neutral blend, for a simple reason: this recipe never sees heat, and guar hydrates cold.

Method
Cold blend, shallow tray, four to six passes with a fork
- 1Whisk every dry ingredient together first: sugars, milk powder, stabiliser and salt. Dry-blending them stops the stabiliser clumping when it meets liquid.
- 2Warm the liquids to 40 C (104 F), then rain the dry mix in while whisking hard.
- 3Heat to 82 C (180 F) and hold for 2 minutes so the stabiliser hydrates.
- 4Chill in an ice bath to under 5 C (41 F) within 2 hours. Slow cooling is where bacteria and coarse crystals both start.
- 5Age 6 to 12 hours in the fridge under 5 C (41 F). This is when the stabiliser and the milk protein take up water.
- 6Fold the fruit in cold, after ageing. Heating it costs you the fresh aroma and nothing is gained.
- 7Freeze in a shallow metal pan 2 to 3 cm deep, breaking the crystals with a fork every 30 to 40 minutes, 4 to 6 times.
- 8Freeze firm, then temper 10 to 15 minutes in the fridge before scooping.
The balance
All six against the professional range for Sorbetto.
Protein at 0.47 percent against a 0.5 percent ceiling is the tightest number on this sheet and the one that sets the fruit dose. Melon runs about 0.9 percent protein, so 500 g is close to the arithmetic limit and the recipe cannot be made to taste more of melon by adding melon. The second number doing real work is sugars at 29.84 percent against a 32 ceiling, which is high, and it is high because 500 g of a 10 percent solids fruit leaves the sheet short of dry matter: 90 g of glucose powder and 35 g of maltodextrin were brought in to lift solids to 31.21 percent without lifting POD past 209.62 in its 175 to 240 range. Water closes at 68.79 percent, mid band in 65 to 73, and fat is 0.01 percent, effectively none, as a sorbetto requires.
The Brix of melon runs from about 8 in a green fruit to 14 in one that is properly ripe, and since the fruit dose is pinned by the protein ceiling rather than by flavour, a poor melon cannot be compensated by using more of it. That is the single most important thing about this recipe. Measure the flesh with a refractometer first and make the correction on the sucrose afterwards. Cold process only: heated melon develops a cooked pumpkin note that nothing removes. Guar gum replaces the neutral stabiliser blend precisely because it hydrates without heat, so blend it with the dry sugars before it meets the fruit, otherwise it clumps.
If it goes wrong
Not enough acid for a fruit that sits at pH 6.0 to 6.7, or the lemon juice was cut.
Keep the full 20 g of squeezed lemon juice. On a very ripe, very neutral melon it is the only thing separating sorbetto from sweetened water.
A low Brix melon dropped total solids below the 27 percent floor. The sheet is built to sit at 31.21 percent.
Refractometer first, then raise the sucrose in small steps, watching that sugars stay under the 32 percent ceiling. Do not add more melon: at 0.47 percent protein against 0.5, there is no room.
The melon was heated, usually to dissolve the sugars or hydrate the stabiliser.
Dissolve the sugars in the 207 g of water cold and use the guar gum as written. Guar hydrates cold, which is exactly why it is on this list instead of a neutral blend.
