Lemon Sorbet

Along the Amalfi coast the sorbetto is built on the sfusato, and there the peel counts as much as the juice. This sheet keeps both: 180 g of juice per kilo, the classic 18 percent, plus 12 g of zest to put back the aromatic oils that squeezing leaves behind, staying under the dose where pith starts pushing bitterness in. Everything else is structure, because the juice brings almost no dry matter with it. Sugars carry the whole load here, sucrose alongside dextrose, glucose powder and maltodextrin, and the stabiliser sits at the top of its professional band since no other recipe has this much free water to hold.

That is why sucrose sits at 120 g/kg and why maltodextrin appears at 29 g/kg. Maltodextrin is nearly tasteless and barely sweet, so it fills dry matter without pushing POD, which finishes at 209.92 inside 175 to 240. Dextrose at 65 g and glucose powder at 90 g do the freezing point work, landing PAC at 312.06.

Zest at 12 g/kg puts back the limonene that squeezing and straining strip out. Above roughly 20 g/kg the white pith starts contributing bitterness rather than perfume, which is the practical ceiling on that lever.

Stabilizer at 4 g/kg is 0.4%, the top of the 0.2 to 0.4% professional band. Water at 68.77% is what justifies it: this is a mix with a lot of free water and nothing else to hold it, since fat reads 0.05%, protein 0.08% and MSNF is zero.

Method

Granita scrape, then one blender pass

  1. 1Whisk every dry ingredient together first: sugars, milk powder, stabiliser and salt. Dry-blending them stops the stabiliser clumping when it meets liquid.
  2. 2Warm the liquids to 40 C (104 F), then rain the dry mix in while whisking hard.
  3. 3Heat to 82 C (180 F) and hold for 2 minutes so the stabiliser hydrates.
  4. 4Chill in an ice bath to under 5 C (41 F) within 2 hours. Slow cooling is where bacteria and coarse crystals both start.
  5. 5Age 6 to 12 hours in the fridge under 5 C (41 F). This is when the stabiliser and the milk protein take up water.
  6. 6Fold the fruit in cold, after ageing. Heating it costs you the fresh aroma and nothing is gained.
  7. 7Freeze in a shallow metal pan 2 to 3 cm deep, breaking the crystals with a fork every 30 to 40 minutes, 4 to 6 times.
  8. 8Freeze firm, then temper 10 to 15 minutes in the fridge before scooping.

The interesting number is not the highest one, it is the gap. Sugars finish at 29.72%, near the top of the 23 to 32 band, while POD stays at 209.92, comfortably below the 240 ceiling. That gap is the whole reason the sugar is split four ways instead of just using more sucrose: dextrose, glucose powder and maltodextrin buy solids and freezing point depression at a much lower sweetness cost. Push all of it back into sucrose and you would still hit 31.23% solids and taste a syrup. PAC at 312.06 is the lowest of the fruit sorbets in this group, which means this one sets a little firmer than the lime or lychee versions and wants a shorter temper before scooping.

Technique note

Zest goes into the hot syrup at 85 C so the limonene moves into the sugar phase, then it gets strained out. The juice goes in only when the syrup is down to 4 C, and this is not a taste preference. At pH near 2.3, holding lemon juice hot inverts sucrose into glucose and fructose during the hot phase. Inverted sugar has a higher PAC than the sucrose it replaced, so the mix ends up softer than the 312.06 you balanced for, and nothing warns you: the recipe looks identical. On top of that you lose the top notes. Mature 4 hours at 4 C before churning.

If it goes wrong

The sorbet never firms up and weeps in the tub.

The juice was added while the syrup was still hot. At pH around 2.3 the acid inverted part of the sucrose and PAC ran past the 312.06 the formula was built for.

Cool the syrup to 4 C first, then add the 180 g of juice, then mature 4 hours.

Sour but flat, does not smell of lemon.

The zest was skipped or added cold. The juice carries acidity, not aroma.

Infuse 12 g/kg of zest in the syrup at 85 C and strain it out before chilling.

A bitter tail behind the sourness.

White pith came along with the zest, or the zest dose went well above 12 g/kg.

Take only the yellow layer and stay under about 20 g/kg.
