Keto Vanilla Gelato

Density comes through before flavour does, a body far closer to a full sugar gelato than most sugar free scoops manage, and the reason is maltitol: its PAC of 99 against sucrose at 100 leaves the freezing behaviour roughly where it belongs. The cold that comes with it bites a little harder than sugar would, since erythritol takes heat off the tongue as it dissolves. Vanilla is the slow arrival. Bean and extract both need warmth to open, so it builds while the spoon sits in the mouth, floral at the edges, rounder underneath, and it is still there long after the cold has gone.

Maltitol is the load bearer at 172 g/kg. Its POD is 85 and its PAC is 99, against sucrose at 100 and 100, so it is the only substitute that goes in nearly one for one without wrecking the freezing curve. Total sugars finish at 18.43%, POD at 163.94, and PAC at 259.04, mid band in the 220 to 300 range.

Erythritol is capped at 10 g/kg for a reason. Its PAC is 280, close to three times sucrose, so in quantity it leaves the base slack. It also dissolves endothermically, which reads on the tongue as a cooling, almost mentholated edge, and that is precisely the sensation you do not want in vanilla.

Vanilla goes in on two vectors: 6 g/kg of bean, roughly two pods, and 10 g/kg of extract. The pod gives the vanillin pulled out in the hot phase, the extract carries the lighter aromatics that heat would drive off. Skim milk powder at 35 g/kg and whey protein at 5 g/kg close MSNF at 9.96% and protein at 3.97%, and whey is preferred over more milk powder when you want the protein without all the lactose that comes with it.

Method

Strained bean infusion, shallow tray, fork passes

  1. 1Whisk every dry ingredient together first: sugars, milk powder, stabiliser and salt. Dry-blending them stops the stabiliser clumping when it meets liquid.
  2. 2Warm the liquids to 40 C (104 F), then rain the dry mix in while whisking hard.
  3. 3Heat to 82 C (180 F) and hold for 2 minutes so the stabiliser hydrates.
  4. 4Chill in an ice bath to under 5 C (41 F) within 2 hours. Slow cooling is where bacteria and coarse crystals both start.
  5. 5Age 6 to 12 hours in the fridge under 5 C (41 F). This is when the stabiliser and the milk protein take up water.
  6. 6Freeze in a shallow metal pan 2 to 3 cm deep, breaking the crystals with a fork every 30 to 40 minutes, 4 to 6 times.
  7. 7Freeze firm, then temper 10 to 15 minutes in the fridge before scooping.

PAC at 259.04 and MSNF at 9.96% explain most of this formula. The PAC sits mid band, which is where a plain vanilla wants to be: a flavor with nothing to hide behind needs a clean cut at freezer temperature rather than a soft slump, and mid band is what gives that after a short temper. Getting there without sucrose is the trick, and only maltitol at PAC 99 can substitute at scale, which is why it accounts for 172 of the 182 g/kg of sweetener in the mix. MSNF at 9.96% is the other constraint, and it is a limit rather than a target. Milk solids are what make a vanilla base taste like dairy instead of sweetened water, but the 8 to 12% band for a milk gelato drags a fixed amount of lactose along with it. Here that comes to 5.43% of the mix and 8.73% of the water phase, which passes the sandiness check but leaves no room to add powder. Fat at 8.43%, from 180 g/kg of cream, covers the rest of the body.

Technique note

Erythritol recrystallizes in storage far more readily than sucrose. Keep it at the 10 g/kg in this formula, which is 1% of the mix, and dissolve it completely at 60 C before the base goes up to pasteurization temperature, or hard crystals turn up on the spoon after about 48 hours. The second point is one the page should not bury: the 8 to 12% MSNF band for a milk gelato brings lactose with it, and this mix lands at 5.43%. This is a no added sugar, low carb gelato. It is not a zero carbohydrate gelato. For the vanilla, split and scrape the pod into the hot phase, hold at 85 C for 30 seconds, let it steep down to 60 C, strain, and age 8 to 12 hours at 4 C.

If it goes wrong

Hard crystals on the spoon after two days, though it was smooth on day one.

Erythritol coming out of solution. It recrystallizes far more easily than sucrose.

Dissolve the 10 g/kg completely at 60 C before heating any further, and do not increase the dose.

A cold, almost minty edge that does not belong in vanilla.

Too much erythritol. Its dissolution is endothermic and it registers as a cooling sensation.

Hold erythritol at 10 g/kg and let maltitol carry the sweetness, as the 172 g/kg in this formula does.

Weak vanilla, mostly sweetness and dairy.

The extract went in during the hot phase and its volatiles boiled off, or the pod was strained out too early.

Infuse the split pod at 85 C, let it steep down to 60 C before straining, and add the 10 g/kg of extract once the base is below 60 C.
