High Protein Vanilla Gelato

Where the usual protein pudding turns chalky, this one stays cold and clean, vanilla seed visible in the flecks and a milky finish that never goes heavy.

Beside a standard vanilla gelato, the trade runs in both directions. This one wins on structure without spending sugar: whey protein and milk powder take protein to 4.63% and MSNF to 10.02%, inulin supplies the rest of the solids, and the mix reaches 37.79% total while the sugars stay at 16.95%. What it gives up is richness. Fat closes at 6.33%, the lower half of the band, so it coats the palate less than a cream-led base does and the flavour has less to hide behind. That is why the vanilla goes in twice: 5 g/kg of bean for the creamy, fat-soluble notes and 10 g/kg of pure extract for the vanillin that survives the freezer.

The bottleneck in any high protein base is not the protein, it is total solids. Protein is a solid and it counts, so the usual way to reach 37.79% total solids is to add sugar, and sugar has a ceiling of its own at 22%. Here 37 g of inulin HP per kilo does that work instead. It is a solid that is not a sugar, so sugars stay at 16.95% and there is room left over for the whey.

Vanilla goes in twice, 5 g of bean and 10 g of pure extract per kilo, which is about a bean and a half per litre. The bean carries the fat soluble notes that dissolve into the cream and survive the rest. The extract carries alcohol soluble vanillin that survives freezing and the temperature swings a home freezer puts a tub through.

Method

65 C hold, sieve, 12 hour rest, shallow pan still-freeze

  1. 1Whisk every dry ingredient together first: sugars, milk powder, stabiliser and salt. Dry-blending them stops the stabiliser clumping when it meets liquid.
  2. 2Warm the liquids to 40 C (104 F), then rain the dry mix in while whisking hard.
  3. 3Heat to 82 C (180 F) and hold for 2 minutes so the stabiliser hydrates.
  4. 4Chill in an ice bath to under 5 C (41 F) within 2 hours. Slow cooling is where bacteria and coarse crystals both start.
  5. 5Age 6 to 12 hours in the fridge under 5 C (41 F). This is when the stabiliser and the milk protein take up water.
  6. 6Freeze in a shallow metal pan 2 to 3 cm deep, breaking the crystals with a fork every 30 to 40 minutes, 4 to 6 times.
  7. 7Freeze firm, then temper 10 to 15 minutes in the fridge before scooping.

Protein at 4.63% and MSNF at 10.02% are the two numbers this recipe exists for, and neither could sit that high without the inulin. Total solids reach 37.79% inside a 34 to 42 window while sugars stay at 16.95%, low in the 14 to 22 range, which is only possible because 37 g per kilo of those solids are not a sugar. Fat is deliberately restrained at 6.33% against a 5 to 12 range: a high protein base already feels substantial in the mouth, and piling cream on top makes it heavy rather than creamy. PAC 257.92 sits mid-window, so the tub firms up properly instead of staying slack, and lactose finishes at 8.78% of the water phase, under the sandiness limit even with 25 g of non-fat dry milk and 150 g of skim milk in the mix.

Technique note

Split the pod, scrape the seeds into cold milk and infuse the whole pod through the entire 65 C hold of 30 minutes, then pull the pod out before the base rests. Left in overnight it turns woody and astringent. The extract goes in only once the base is under 30 C, because alcohol based aroma evaporates. The 65 C ceiling is set by the whey: a fast 85 C cycle denatures it and leaves a cooked milk flavour that a white gelato has nowhere to hide. One risk belongs to white flavours specifically, which is that any protein aggregate shows up as a grey speck. Pass the base through a fine sieve before resting and check it by eye after the 12 hours at 4 C.

If it goes wrong

Grey or beige specks scattered through the finished tub.

The base went above 65 C and the whey aggregated. In a white gelato there is no colour to hide it behind.

Hold at 65 C for 30 minutes with a thermometer in the pan, and sieve the base before it goes to rest.

It tastes of boiled milk instead of vanilla.

The same temperature problem, or the extract went in while the base was still hot and its aromatics left with the steam.

Keep the hold at 65 C and add the 10 g of extract only once the base is below 30 C.

The texture is thick and slightly gummy on the tongue.

37 g of inulin plus 3 g of stabilizer per kilo is a lot of water binding, and it is easy to overhydrate by resting far past 12 hours.

Keep the rest at 12 hours at 4 C and do not push the stabilizer above the 3 g written here.
