Dubai Chocolate Pistachio Gelato

Roast comes first, sesame a step behind, and the pastry keeps snapping long after the cold has softened everything else on the spoon.

The bar that made this flavour famous holds pistachio cream, tahini and toasted kataifi behind milk chocolate, and only three of those four survive the move into a mix. Pastry is crunch, and crunch has no place in a balance sheet: it folds in at extraction and never touches a single number. What the base has to rebuild is the fat and the roast, work split three ways across 65 g of pistachio paste, 12 g of tahini and 45 g of milk chocolate per kilo. Together they land on the palate about as hard as 90 g of pure pistachio would, and they do it without pushing fat past the ceiling.

Sixty five grams of pistachio paste sits below the 80 to 100 g range you see on pure nut paste specs, and that is deliberate. Tahini and milk chocolate pull in the same roasted, fatty direction, so the three together land about where a pure pistachio at 90 g would, with fat closing at 8.24 percent instead of climbing towards the 12 ceiling. Tahini at 12 g is a seasoning dose. Past roughly 20 g the sesame bitterness starts eating the pistachio.

The strange number on this sheet is the dairy: 10 g of cream and 16 g of non fat dry milk in a whole kilo. Both are that low because the nuts already deliver. Pistachio runs around 20 percent protein and tahini around 17.5, which puts protein at 4.68 against a 5 percent ceiling, and the milk chocolate contributes roughly 7.6 g of MSNF by itself. MSNF still has to clear its 8 percent floor and it does, at 8.58, with almost nothing to spare.

Method

Tray freeze, toasted kataifi layered in at the end

  1. 1Whisk every dry ingredient together first: sugars, milk powder, stabiliser and salt. Dry-blending them stops the stabiliser clumping when it meets liquid.
  2. 2Warm the liquids to 40 C (104 F), then rain the dry mix in while whisking hard.
  3. 3Heat to 82 C (180 F) and hold for 2 minutes so the stabiliser hydrates.
  4. 4Melt the chocolate to 45 C (113 F) and stir it into the hot base off the heat, then blend 60 seconds until glossy.
  5. 5Off the heat, whisk in the paste, then blend 60 seconds so the fat emulsifies instead of separating.
  6. 6Chill in an ice bath to under 5 C (41 F) within 2 hours. Slow cooling is where bacteria and coarse crystals both start.
  7. 7Age 6 to 12 hours in the fridge under 5 C (41 F). This is when the stabiliser and the milk protein take up water.
  8. 8Freeze in a shallow metal pan 2 to 3 cm deep, breaking the crystals with a fork every 30 to 40 minutes, 4 to 6 times.
  9. 9Freeze firm, then temper 10 to 15 minutes in the fridge before scooping.

Protein at 4.68 percent against a 5 percent ceiling is the constraint that shapes everything else. Pistachio and sesame are protein dense, so every gram of nut paste eats into the same allowance the milk solids need, which is why non fat dry milk is held to 16 g and MSNF finishes at 8.58, barely over its 8 floor. Fat at 8.24 percent in a 5 to 12 range is the other anchor, and the point is that it is nut fat rather than dairy fat. That is why cream falls to 10 g and why 4 g of carob seed flour is in the recipe: nut fat emulsifies less well than milk fat, and pure LBG at that classic dose is what holds the free water in place. The remaining indicators sit clear: solids 38.08 in 34 to 42, sugars 17.3 in 14 to 22, POD 168.3 in 135 to 200, PAC 262.5 in 220 to 300, water 61.92 in 58 to 66. Lactose is 4.68 percent of the mix, under the 7 percent line.

Technique note

Three additions each have their own temperature here. Pasteurise milk, cream, sugars and milk powder alone at 85 C for 30 seconds. Drop the mix to 60 to 65 C and blend the chopped milk chocolate in, because chocolate added to a cold base sets into hard specks. Hold that same 60 to 65 C and blend the pistachio paste and tahini in last, never during heating, since nut fat held at 85 C picks up a rancid note. Then age 6 to 12 hours at 4 C, which is the time the carob seed flour needs to hydrate fully. Skip that and the base reads sandy no matter how good the balance is. The kataifi stays out of the mix entirely: toast it, then layer it in at extraction or in the tub, and accept that it softens within about 48 hours, so this flavour has a short sensory shelf life even though the base itself keeps longer. Allergen load is heavy, pistachio, sesame and milk in one recipe.

If it goes wrong

The milk chocolate went into a base that had already cooled, so it set instead of dispersing.

Blend the chopped chocolate into the mix at 60 to 65 C, straight after pasteurisation.

A rancid, solvent like edge over the pistachio.

The nut pastes were in the pot during pasteurisation. Nut fat oxidises when it is held at 85 C.

Pasteurise the dairy alone, then add the 65 g of pistachio paste and 12 g of tahini at 60 to 65 C, off the heat.

The base feels sandy even though the numbers all passed.

The carob seed flour was not given time to hydrate. LBG at 4 g per kilo needs hours, not minutes.

Age the base 6 to 12 hours at 4 C before churning. Do not compensate by adding more stabiliser.
