Chocolate Rum Gelato

Read the back of the bar before you look at the price. A 70% couverture worth using lists cocoa mass, cocoa butter and sugar and very little else, while the cheap one swaps part of the cocoa butter for other vegetable fats, and at 95 g/kg that substitution turns up in the mouth as a waxy film instead of a clean melt. The bottle is the second decision: an aged rum carries the molasses and vanilla notes that survive freezing, where a white or artificially flavoured spirit adds alcohol and almost nothing else. Alcohol is expensive here, at PAC 296 and no solids whatsoever, which is why 22 g/kg is as far as this goes and still sets in a home freezer.

22 g/kg is 2.2% of the mix and lands near 0.8% alcohol in the finished gelato. It is enough to read as rum: molasses, and the vanilla note that comes from barrel age. Take it to 4 or 5% and the product stops hardening in a normal cabinet, and a domestic freezer will not rescue it either.

The compensation shows up in the sugar line. Total sugars finish at 15.88%, in the lower half of the 14 to 22 band, and there is no dextrose in this formula at all, which is unusual for a chocolate base. PAC still reaches 270.74 because the rum got there first, so sucrose was pulled back to 130 g/kg to keep that number inside 220 to 300.

What replaces the missing sugar is dairy. 60 g/kg of cream and 26 g/kg of skim milk powder put fat at 8.45% and MSNF at 8.62%, both inside band, and both add body without touching PAC. Chocolate sits at 95 g/kg, a little under a straight chocolate gelato, because the rum is already supplying aromatic complexity and a heavier cocoa dose would bury it.

Method

Shallow tray, rum stirred in cold, three blender passes

  1. 1Whisk every dry ingredient together first: sugars, milk powder, stabiliser and salt. Dry-blending them stops the stabiliser clumping when it meets liquid.
  2. 2Warm the liquids to 40 C (104 F), then rain the dry mix in while whisking hard.
  3. 3Heat to 82 C (180 F) and hold for 2 minutes so the stabiliser hydrates.
  4. 4Melt the chocolate to 45 C (113 F) and stir it into the hot base off the heat, then blend 60 seconds until glossy.
  5. 5Chill in an ice bath to under 5 C (41 F) within 2 hours. Slow cooling is where bacteria and coarse crystals both start.
  6. 6Age 6 to 12 hours in the fridge under 5 C (41 F). This is when the stabiliser and the milk protein take up water.
  7. 7Freeze in a shallow metal pan 2 to 3 cm deep, breaking the crystals with a fork every 30 to 40 minutes, 4 to 6 times.
  8. 8Freeze firm, then temper 10 to 15 minutes in the fridge before scooping.

Two numbers explain the shape of this mix. PAC at 270.74 is already in the upper half of the 220 to 300 band with 130 g/kg of sucrose and zero dextrose, because 22 g/kg of rum at PAC 296 depresses the freezing point far out of proportion to its weight. Remove the rum and the same recipe would freeze noticeably harder. The second number is MSNF at 8.62%, barely over the 8% floor, with lactose sitting at 7.63% of the water phase. That pairing is why milk powder stops at 26 g/kg: there is body to buy from powder, but the water phase cannot carry much more lactose before it crystallizes in storage. Fat at 8.45% inside 5 to 12 is the third lever, and it is not purely structural. The aroma esters that make rum taste like rum are fat soluble, and without that fat the alcohol reads as heat on the tongue rather than as flavor.

Technique note

The rum goes in cold, after maturation, seconds before churning. Ethanol boils at 78 C, so rum added during an 85 C pasteurization mostly leaves, and what stays behind is sugar with no aroma while the PAC you calculated no longer matches the PAC you have. Order: pasteurize milk, sugars, milk powder and cocoa powder at 85 C, emulsify the chopped chocolate off the heat, chill fast to 4 C, mature 8 to 12 hours, blend the rum in for about 15 seconds, then freeze immediately. Expect less overrun than a plain chocolate gelato, because alcohol destabilizes the foam and cuts air incorporation. The result is denser and darker on purpose. Store at -14 C and serve at -12 C.

If it goes wrong

The gelato never firms up and stays soupy in the freezer.

Too much rum. PAC is already 270.74 at 22 g/kg, and each extra 10 g pushes it toward the 300 ceiling quickly.

Do not solve it by cutting rum below 15 g/kg, or the flavor on the label stops existing. Trade some sucrose for milk powder instead: that lowers PAC and raises solids in one move.

You can smell rum in the pot but taste none of it in the finished gelato.

The rum went in hot. Ethanol boils at 78 C, well below the 85 C pasteurization.

Add it cold, after the 8 to 12 hour maturation, right before churning.

Texture is denser and heavier than other chocolate gelati.

Expected behavior. Alcohol reduces air incorporation, so overrun drops.

Churn colder and leave the recipe alone. Fat at 8.45% and MSNF at 8.62% are already carrying the body, and adding sugar to compensate only pushes PAC further up.
