Masala Chai Gelato
You taste the spice before you taste the sugar, cinnamon leading with nutmeg underneath, on a base thick enough to carry that warmth against the cold.

What you buy at the shop decides more of this than anything that happens at the machine. Cinnamon and nutmeg lose their volatile oils sitting ground in a jar, so a tin opened last year gives you colour and dust and very little scent; whole bark and whole nutmeg, ground the week you churn, are a different ingredient altogether. The sugar is the other label worth reading, since real muscovado is damp, clumps in the bag and smells of molasses, while the imitation is white sugar sprayed with syrup and sweetens without any depth at all. Both count because the doses are deliberately small: 4 g/kg of ground spice in total and 30 g of muscovado, with the black tea going in as a strained infusion.
The sugar side is where this formula stops looking like the others. There are four of them: 95 g/kg of sucrose, 45 g/kg of glucose powder, 30 g/kg of muscovado and 25 g/kg of dextrose. Total sugars land at 18.91%, high inside the 14 to 22 band, but POD lands at only 168.81, in the lower half of 135 to 200. That gap is the whole point. Glucose powder and muscovado add solids and freezing point depression without adding much sweetness, so a dense, spicy mix does not arrive on the palate as candy.
The muscovado is standing in for the jaggery of the original, bringing molasses character plus 28.5 g of sugar that the solver simply subtracts from the sucrose. PAC ends at 263.09, in the upper half of 220 to 300, which is where a spiced mix wants to be: soft enough that the aromatics release at serving temperature.
Ground spice is capped hard at 4 g/kg in total, 3 g of cinnamon and 1 g of nutmeg. In a traditional masala the ratio by weight runs closer to cardamom 40, dried ginger 30, clove 20, pepper 20, fennel 10, cinnamon 8, so cinnamon is a minority player. It leads here because it is the one the ingredient table carries; the cardamom, clove, pepper, ginger and the black tea itself go in as a strained infusion.

Method
Half-freeze, whip, refreeze
- 1Whisk every dry ingredient together first: sugars, milk powder, stabiliser and salt. Dry-blending them stops the stabiliser clumping when it meets liquid.
- 2Warm the liquids to 40 C (104 F), then rain the dry mix in while whisking hard.
- 3Heat to 82 C (180 F) and hold for 2 minutes so the stabiliser hydrates.
- 4Chill in an ice bath to under 5 C (41 F) within 2 hours. Slow cooling is where bacteria and coarse crystals both start.
- 5Age 6 to 12 hours in the fridge under 5 C (41 F). This is when the stabiliser and the milk protein take up water.
- 6Freeze in a shallow metal pan 2 to 3 cm deep, breaking the crystals with a fork every 30 to 40 minutes, 4 to 6 times.
- 7Freeze firm, then temper 10 to 15 minutes in the fridge before scooping.
The balance

The distance between 18.91% total sugars and a POD of only 168.81 is the design. Sucrose was pulled down to 95 g/kg, the lowest of any milk base here, and replaced with 45 g/kg of glucose powder and 30 g/kg of muscovado, which contribute solids and PAC per gram of sweetness far more efficiently than sucrose does. That is how solids reach 38.21% and PAC reaches 263.09 while the mix still tastes of tea and spice rather than sugar. On the spice side the ceiling is textural, not culinary: total ground spice above roughly 6 g/kg turns the mouthfeel earthy and grainy, so 4 g/kg is where it sits, with the cinnamon and nutmeg starch also contributing a little body since they are never strained out.
The critical variable is steeping time, not temperature. Steep the cracked whole spices and the black tea in the milk at 80 to 85 C for 5 to 8 minutes and strain. Past 10 minutes the tea tannins bind to casein and you get dry astringency plus a dirty gray cast to the color, and neither comes back. The ground cinnamon and nutmeg are not strained: whisk both into part of the sucrose before they touch liquid, or they clump. Nutmeg has a hard ceiling of 1.5 g/kg, since above that the myristicin reads soapy and resinous. Add the cream after the infusion, off the heat, because too much fat during extraction masks the cardamom terpenes.
If it goes wrong
The tea steeped past 10 minutes and its tannins bound to the milk casein.
Steep 5 to 8 minutes at 80 to 85 C and strain on time. A tannin-bound base cannot be corrected afterwards, so start again.
Too much nutmeg. Myristicin turns unpleasant fast above the 1.5 g/kg ceiling.
Keep nutmeg at the 1 g/kg in the formula and lead the spice with the 3 g of cinnamon.
Total ground spice pushed past about 6 g/kg, which is a texture limit rather than a flavor one.
Hold the ground spice at the 4 g/kg total here and get more aroma from the strained infusion instead.
