Amaretto Almond Gelato
Halfway through the spoonful the toasted nut turns bittersweet, and the finish comes up dry where sugar would usually take over, all of it cold and close textured.

Summer in Sicily leans on a drink rather than a pudding: latte di mandorla, almond paste let down with water and sugar, served cold. A milk gelato built on that habit keeps the nut in charge instead of using it as a perfume over a white base, which is why 75 g of pure almond paste per kilo anchors this sheet. That much paste carries its own fat and its own protein, so the dairy behind it stays plain and the milk powder is barely needed. The liqueur is a small pour at 25 g, and it works on the aroma and on the dry finish, not on the sweetness.
So the paste does the talking. At 75 g per kilo it sits mid range in the usual 60 to 100 g for nut pastes and brings 38 g of fat and 15.7 g of protein to the kilo. That protein is the real bottleneck, not the fat: a milk gelato is held between 3 and 5 percent protein, and this sheet closes at 4.68 percent.
The reason is a fixed ratio: milk carries about 0.37 g of protein per gram of MSNF, whether it arrives as fluid milk, cream or powder. The 8 percent MSNF floor therefore costs about 3 g of protein on its own. With 15.7 g already coming from the almond, roughly 34 g are left for the dairy side, which pins MSNF at 8.41 percent and leaves the milk powder, just 24 g here, as a very short lever. The liqueur helps in one respect: at 51.5 percent sugar it is flavouring, sugar and antifreeze at the same time, which is part of why the sugars read 17.42 percent on only 130 g of weighed sucrose.

Method
Cold pan, liqueur last
- 1Whisk every dry ingredient together first: sugars, milk powder, stabiliser and salt. Dry-blending them stops the stabiliser clumping when it meets liquid.
- 2Warm the liquids to 40 C (104 F), then rain the dry mix in while whisking hard.
- 3Heat to 82 C (180 F) and hold for 2 minutes so the stabiliser hydrates.
- 4Off the heat, whisk in the paste, then blend 60 seconds so the fat emulsifies instead of separating.
- 5Chill in an ice bath to under 5 C (41 F) within 2 hours. Slow cooling is where bacteria and coarse crystals both start.
- 6Age 6 to 12 hours in the fridge under 5 C (41 F). This is when the stabiliser and the milk protein take up water.
- 7Freeze in a shallow metal pan 2 to 3 cm deep, breaking the crystals with a fork every 30 to 40 minutes, 4 to 6 times.
- 8Freeze firm, then temper 10 to 15 minutes in the fridge before scooping.
The balance

Read PAC and protein together and the sheet explains itself. PAC finishes at 271.97, above the middle of 220 to 300, because 65 of those points come from 25 g of Amaretto rather than from sugar, and that is exactly why sugars sit at 17.42 percent with no dextrose weighed at all: adding any would spend a budget the liqueur has already claimed. Protein finishes at 4.68 percent against a 5 percent ceiling, which is what caps the almond paste at 75 g, and MSNF sits at 8.41 percent, just over its floor, for the same reason. Fat lands at 8.53 percent inside 5 to 12, most of it from the paste, with the cream held to 70 g. Solids 37.98, water 62.02, POD 167.41 and lactose at 4.59 percent of the mix all sit comfortably inside their limits.
The Amaretto goes in cold, at the end of ageing, never into pasteurisation. Ethanol boils at 78 C, so anything added before the 82 to 85 C hold evaporates the aromatic carrier of the benzaldehyde and leaves you sweetened water: you keep the liqueur's PAC and lose its smell. Correct order: pasteurise milk, cream, milk powder, sugars and stabiliser at 82 to 85 C for 30 seconds; blend the almond paste in while the base is still passing through 40 to 50 C, since cold paste will not disperse and forms oily lumps; chill to 4 C; age 6 to 12 hours; add the Amaretto immediately before churning. Homogenise the paste jar before weighing, because pure almond paste separates and otherwise the fat varies from jar to jar and the balance stops being true. Stabiliser stays at 4 g: with 38 g of almond fat per kilo the mix already whips slowly and takes less overrun, and more gum turns it rubbery. Draw a little colder than standard, around -8 to -9 C, to offset the liqueur.
If it goes wrong
Too much liqueur. At 25 g the Amaretto already spends 65 of the PAC budget, and past roughly 35 g per kilo no domestic freezer will harden the mix.
Weigh the Amaretto, do not free pour it, and keep it at 25 g per kilo. If you have already overshot, the batch will only work as a soft dessert.
The liqueur was added before or during the 82 to 85 C pasteurisation and the ethanol carried the aroma off with it at 78 C.
Add the Amaretto cold, after ageing, right before churning. The PAC contribution is the same, the aroma survives.
Stabiliser pushed above 4 g on top of 38 g of almond fat per kilo, which was already slowing the churn.
Hold the stabiliser at 4 g and let the paste fat do the structural work.
