Stabilizer (Neutral) in gelato

A neutral stabilizer is a dry blend of food hydrocolloids (typically locust bean gum, guar gum and carrageenan) added to a gelato mix in tiny amounts to bind free water, control ice-crystal growth and give body. It is counted as roughly 100% inert dry solids and adds no sugar, fat or milk solids.

How to use it in gelato

Dose is very low, typically 0.2-0.5% of the mix (about 2-5 g/kg), so its effect on the numbers is on total solids, not on sugar chemistry. It does not sweeten the mix (POD 0) and, at these doses, does not meaningfully lower the freezing point (PAC 0), so it will not change your serving temperature or perceived sweetness in the balance sheet. What it changes is texture: it binds free water, slows ice-crystal and lactose recrystallization during storage, adds viscosity and chew, and improves meltdown resistance. Use it whenever a mix runs low on total solids or is prone to iciness, and lean on it more heavily in low-fat, no-fat or sorbet bases where there is little fat or milk protein to hold structure. Over-dosing makes the product gummy, slimy or slow to melt.

Origin & background

Hydrocolloid stabilizers were adopted in commercial ice cream through the early-to-mid 20th century as continuous freezers and hardening/storage introduced recrystallization problems. Goff & Hartel's 'Ice Cream' (7th ed., 2013) documents locust bean gum, guar and carrageenan as the workhorse stabilizer system, with carrageenan added specifically to prevent the wheying-off (serum separation) that LBG can cause with milk proteins. Guar, from the guar bean, became widespread as a cold-soluble partner to LBG.
