Peach Gelato Recipe: Balanced Ripe Stone Fruit Base

Peach is one of the most rewarding fruits in a gelato case and one of the least forgiving. It is watery, mildly acidic, low in pectin and quick to brown. Balance it properly and you get a bright, fragrant scoop; balance it badly and you get pale, icy sweetness.

Why peach fights back

Start with what a peach actually is. USDA FoodData Central lists raw peach at roughly 88.9 g water, 8.4 g total sugars and 1.5 g fiber per 100 g, for about 39 kcal. That means a ripe peach is close to 11 to 12 percent solids, and the large majority of those solids are sugar. Almost everything else is water, and water is the enemy of a smooth frozen dessert because it is the part that turns into ice crystals.

Ripe fruit is not optional here: an underripe peach brings the same water with much less sugar and aroma.

The second issue is acidity. The FDA reference tables on the approximate pH of foods place peaches between roughly pH 3.3 and 4.05 depending on cultivar and ripeness. That is acidic enough to brighten the finished gelato and to sharpen your perception of sweetness, but it is not lemon. You cannot lean on peach acidity the way you would lean on a citrus sorbetto al limone to cut through sugar, so the sugar load has to be controlled from the recipe rather than corrected at the end.

Third, peaches contain polyphenol oxidase, the enzyme responsible for the brown edges you see on a cut peach within minutes. In a purée that is exposed to air and then blended at speed, browning happens fast and it is permanent. Two things stop it: heat, which denatures the enzyme, and acid plus ascorbic acid, which slows it and holds colour. Lemon juice does both jobs at once, which is why it appears in the ingredient list below even though the recipe is not short of acid.

Finally, peach carries very little usable pectin compared to apple or citrus peel. It will not build body on its own. All of the structure in this recipe comes from milk solids, sugars and a small stabilizer dose, exactly as it would in a cream base.

The recipe: 1000 g of peach gelato mix

This is a white base built around 30 percent fruit. It is written for 1000 g of mix, which yields roughly 1.3 litres of finished gelato at 30 percent overrun. Overrun is a gain in volume, not in weight: the finished tub still holds 1000 g. Scale it linearly.

To get 300 g of purée, start with about 400 g of whole peaches. USDA yield tables put peeled, pitted peach at about 76 percent of as-purchased weight, so budget roughly a quarter of the fruit as waste, and a little more if it is very ripe and clings to the stone.

The sugar split matters more than the total. Sucrose is the reference sugar for both sweetness and freezing point depression. Dextrose, at roughly 70 percent of the sweetening power of sucrose but nearly twice its effect on freezing point per unit weight, lets you push the mix softer at serving temperature without making it cloying. Swapping the 44 g of dextrose for the same weight of sucrose will give you a noticeably harder, sweeter scoop. What the balance numbers mean

Fat is deliberately low. A peach at 4.2 percent fat tastes like peach; the same recipe at 8 percent tastes like peach ice cream, because milkfat coats the palate and mutes volatile fruit aroma. Goff and Hartel discuss this flavour-release trade in Ice Cream, and it is the single clearest reason artisan fruit gelato runs leaner than a custard base. If you want a richer version, add cream and take out milk, but expect the fruit to recede.

MSNF at 7.1 percent is doing the structural work that peach cannot. Milk proteins stabilize the air cells whipped in during churning and the lactose contributes solids without much sweetness. Push MSNF much above 11 percent and you risk lactose crystallizing into a sandy texture during storage. Quick reference. For fruit gelato, hold total solids at 32 to 38 percent, sugars at 18 to 22 percent, fat at 3 to 8 percent and fruit at 25 to 35 percent, then use dextrose to soften the scoop without adding sweetness.

Total solids at 32.6 percent is at the low end on purpose, because 30 percent fruit brings a lot of water with it. Below about 32 percent the mix has too much free water and the finished gelato reads icy no matter how well you churn it. If your peaches are unusually watery, measure them with a refractometer and adjust: every point of Brix you lose in the fruit costs you roughly 0.3 percent total solids in the finished mix at this fruit ratio. POD and PAC are the two numbers most home recipes ignore. POD is relative sweetness against sucrose at 100; PAC is relative depression of the freezing point. A mix can be correctly sweet and still freeze rock hard, or scoop beautifully and taste like syrup. Running both, as the POD calculator does, is what lets you serve at gelato temperature rather than ice cream temperature. The underlying physics is covered in freezing point depression in gelato.

Method, step by step

  1. Prepare the fruit. Blanch whole peaches for 30 to 45 seconds in boiling water, then drop them into ice water. The skins slip off. Halve, pit, and weigh out 300 g of flesh.
  2. Purée with the lemon. Blend the peach flesh with the 15 g of lemon juice immediately. The acid slows enzymatic browning while you work. Hold the purée covered and refrigerated, or freeze it if you are prepping ahead.
  3. Build the white base. Warm the milk and cream to about 40 C, then whisk in the skim milk powder until fully dispersed. Add the sucrose and dextrose. Premix the stabilizer with a spoonful of the sucrose before adding it, or it will clump.
  4. Pasteurize. For a home batch, hold at 65 C for 30 minutes or 82 C for 25 seconds. In the United States, 21 CFR 135.3 defines a pasteurized frozen dessert mix as one in which every particle has been held at 155 F (68.3 C) for 30 minutes or 175 F (79.4 C) for 25 seconds. Those are flat minimums for the mix, with no step-up or allowance for fat or sugar content, so a commercial batch of this recipe has to clear them however it is balanced.   5. Chill and age. Cool to 4 C as fast as you can, then age the base for 4 to 12 hours. Ageing hydrates the stabilizer and lets the fat crystallize, which improves whipping and body.
  6. Add the fruit cold. Stir the chilled peach purée into the chilled base just before churning. Never cook fresh peach purée into the mix: heat drives off the volatile lactones that make a peach smell like a peach, and you end up with something closer to canned fruit.
  7. Churn. Draw at about minus 6 to minus 8 C, aiming for 25 to 35 percent overrun. Fruit gelato is meant to be dense, and overrun above 40 percent will taste thin.
  8. Harden and serve. Blast freeze to minus 18 C for storage, then temper to about minus 12 C for service. Gelato is served warmer than ice cream, and that is a design choice baked into the PAC number above.

The base is finished, aged and cold before the purée ever touches it.

Troubleshooting a peach batch

The gelato is icy. Almost always total solids. Either the peaches came in under 10 Brix or the fruit ratio crept above 30 percent. Add 10 to 20 g of skim milk powder per kilo, or drop the fruit to 27 percent and see whether the flavour still carries.

The colour turned tan. Browning caught up with you. Purée faster, keep the lemon in the blender jug with the fruit rather than adding it later, and keep the purée covered and cold. Very ripe fruit browns faster than firm-ripe fruit.

The flavour is flat. Usually too much fat, too much sugar, or both. Try dropping the cream to 50 g and adding the difference back as milk, and check that the sweetness is not sitting above POD 22.

It is too hard out of the cabinet. PAC is too low for your serving temperature. Swap 15 g of the sucrose for dextrose and retest, or serve two degrees warmer.

It is soupy in the pan. The opposite problem. Reduce dextrose, raise sucrose, and confirm the cabinet is actually holding minus 12 C. Soft gelato is often a broken display case rather than a broken recipe.
