MSNF (milk solids-not-fat) is the protein and lactose fraction of dairy, and it quietly controls body, chewiness, and how smooth your gelato stays. Balancing a recipe means putting a number on it. This guide walks the arithmetic step by step, using values you can trace to a label or a reference table, so you can hit a target on purpose instead of by luck.

What MSNF is and why it matters

Milk is water, fat, and solids-not-fat. That last part, MSNF, is mostly milk proteins (casein and whey) plus lactose, with a small mineral fraction. In gelato it does real work: the proteins bind water and stabilise the whipped-in air, while lactose adds solids and a faint sweetness. Casein also helps emulsify fat. Together they build body and help hold small ice crystals in place, which is why a mix low in MSNF often melts fast and feels thin.

Most balancing frameworks target MSNF somewhere around 7 to 11 percent of the total mix, with dairy gelato often sitting near 9 to 11 percent. Push it too high and you risk a sandy defect from lactose crystallising during storage; the mechanism is covered in sandy gelato texture. Too low and the gelato feels watery and icy. MSNF is one line in the broader total solids budget, and it has to be balanced against the sugars and fat competing for the same room.

The reference numbers you need

Every calculation rests on the solids composition of your ingredients. Typical figures, consistent with USDA dairy data, are:

Whole milk is roughly 8.5 percent MSNF; cream carries less MSNF because fat displaces the water-based solids, so a fatty ingredient is not automatically a high-MSNF one. Skim milk powder is the workhorse for adding MSNF because it is almost all solids-not-fat with very little water or fat. Always check your actual product's label, since protein and lactose content vary by brand and process, and powders can be labelled low-heat or high-heat with slightly different behaviour.

Quick reference. MSNF from an ingredient = its weight x its MSNF percentage. Sum across all dairy, divide by total mix weight, multiply by 100.

Step by step: calculating MSNF

Take a simple 1000 g white base: 600 g whole milk, 150 g cream, 45 g skim milk powder, 180 g sugar, and 25 g of other solids.

Step 1: MSNF from each ingredient. Multiply each dairy weight by its MSNF fraction.

  • Whole milk: 600 g x 0.085 = 51.0 g
  • Cream: 150 g x 0.055 = 8.3 g
  • Skim milk powder: 45 g x 0.96 = 43.2 g

Step 2: Total the MSNF grams. 51.0 + 8.3 + 43.2 = 102.5 g of MSNF.

Step 3: Convert to a percentage. Divide by the total mix weight and multiply by 100: 102.5 / 1000 x 100 = 10.25 percent MSNF.

That 10.25 percent sits comfortably in the dairy range. Notice that most of the MSNF here comes from just 45 g of powder, which is why powder is such a powerful lever. Sugar and non-dairy solids add nothing to MSNF, but they still count toward total solids, which is a separate figure you track in parallel.

Adjusting MSNF to hit a target

Suppose you want to raise MSNF to 11 percent without changing anything else. You need 110 g of MSNF instead of 102.5 g, a gap of 7.5 g. Since skim milk powder is about 96 percent MSNF, add 7.5 / 0.96, roughly 7.8 g of SMP. To lower MSNF, cut powder or swap some cream for milk, since milk carries more MSNF per gram than cream does.

Two guardrails apply. First, powder also adds total solids and can dry the texture or push the mix toward a pasty body, so move in small steps and taste. Second, respect the lactose ceiling: keeping MSNF under about 11 percent of the mix, or lactose under roughly 6.5 to 7 percent of the water phase, limits the sandy risk, because lactose is only sparingly soluble and will crystallise if concentrated. Where MSNF fits with the other numbers

MSNF never balances alone. It shares the solids budget with sugars and fat, and it interacts with the freezing curve. Raising MSNF adds water-binding proteins that firm the body and slow melt, while sugars set the PAC and softness and fats set richness and coat the palate. A recipe that looks right on MSNF can still be off on fat percentage or sugar selection, so read the numbers as a set rather than tuning one in isolation.

For makers chasing more protein-driven body, ingredients like milk protein concentrate raise the protein share without the full lactose load of skim milk powder, useful when the sandy ceiling is the binding constraint. Sorbetto, by contrast, has essentially no MSNF at all, which is why its body relies on sugars and stabilisers instead of milk solids.

It also helps to think about MSNF against the water phase, not just the whole mix. Lactose crystallises out of the water it is dissolved in, so a low-water, high-solids recipe reaches the sandy threshold at a lower whole-mix MSNF than a leaner one. This is why the same 11 percent figure can be safe in one formula and risky in another. When you scale a base up or down, recompute MSNF rather than assuming the percentage travels unchanged, because rounding the powder can quietly push a large batch over the line.

Common mistakes

The frequent errors are simple. Counting cream as if it had milk's MSNF overstates the figure, because cream carries less solids-not-fat per gram. Forgetting that skim milk powder is nearly all solids makes people add far too much, tipping the mix into a gummy or sandy zone. And confusing MSNF with total solids leads to double counting sugar in the wrong ledger. Keep the two ledgers separate: MSNF is dairy solids-not-fat only; total solids is everything in the mix that is not water. Get those two straight and the rest of the arithmetic falls into place.
