Maltodextrin vs Glucose Syrup in Gelato: When to Switch

Both products start as starch, both stop short of real sweetness, and only one of them carries water into your mix. Maltodextrin is a dry powder below DE 20. Glucose syrup is a wet solution at DE 20 and above. That single boundary decides which one fixes the recipe in front of you.

One Boundary, Drawn at DE 20
Starch is hydrolysed by acid or enzymes into shorter chains, and the process is stopped wherever the manufacturer wants it stopped. Dextrose equivalent records how far it went: native starch is DE 0, pure dextrose is DE 100, and every hydrolysate falls between.
Regulators split the range at 20. In the United States, 21 CFR 184.1444 defines maltodextrin as a nonsweet nutritive saccharide polymer with a dextrose equivalent of less than 20. In the European Union, Directive 2001/111/EC defines glucose syrup as a purified concentrated aqueous solution of nutritive saccharides from starch with a DE of at least 20 on dry matter and a dry matter content of at least 70 percent. Dried glucose syrup, the same product spray dried, must reach 93 percent dry matter.
The consequence is physical rather than legal. Average chain length runs roughly 100 divided by DE, so a DE 10 maltodextrin averages about ten glucose units per chain while a DE 38 syrup averages under three. Long chains mean few molecules per gram, and few molecules mean almost no effect on the freezing curve.

The Numbers Side by Side
Two coefficients carry the comparison. PAC indexes anti freezing power against sucrose at 100, and POD indexes sweetening power on the same scale. The third column is the one most recipes get wrong: how much of each product is actually solids.

Maltodextrin sits at PAC 0 by convention, not because its molecules are exempt from physics. Freezing point depression is colligative: it counts dissolved particles, and a ten unit chain contributes about one tenth the particles of ten free glucose molecules of the same weight. At the two to five percent doses used in gelato the effect disappears inside the rounding, so every balancing sheet in the trade indexes it at zero.
Quick reference. Below DE 20 you are buying dry solids with no PAC and almost no sweetness. Above DE 20 you are buying solids, some PAC, some sweetness and roughly one fifth water. Choose by which of those four you actually need.

What Maltodextrin Actually Does
Maltodextrin is the tool for raising total solids when every other lever is already spent.
Its first job is bulking. A base can be short on solids while sugar is already at the top of its range and fat cannot be raised without changing the flavour brief. Adding sucrose would push sweetness past the point of balance, and adding skim milk powder would push lactose toward sandiness. Maltodextrin adds dry weight with a POD of about 10 and no lactose at all, which is why it appears in almost every reduced sugar formulation.
Its second job is texture. Marshall, Goff and Hartel describe maltodextrins and corn syrup solids in Ice Cream as bulking agents that raise the viscosity of the unfrozen serum and contribute a fat like body in reduced fat products. A thicker serum slows water migration, and slow migration is the mechanism that limits ice recrystallisation across the freeze thaw cycles of a display cabinet.
Its third job is quieter still. Being nonsweet and having very few reducing ends, maltodextrin adds almost nothing to browning during pasteurisation, which matters in pale bases where colour is part of the product.
What Glucose Syrup Actually Does
Glucose syrup is the tool for body, chew and controlled softness, and it charges you water for the privilege.
A DE 38 grade adds solids and elastic pull while barely moving PAC, which is exactly what a dense chocolate or a gianduia wants. A DE 60 grade behaves like a mild sugar instead: PAC 119 and POD 65 make it useful in sorbetti, where softness and body are needed together. The spread of chain lengths in any syrup also interferes with sucrose and lactose crystal growth in high solids bases, the classic doctoring role borrowed from confectionery.
The water is the catch. At roughly 80 percent dry matter, 100 g of syrup delivers about 80 g of solids and 20 g of water that has to come out of the milk somewhere or the balance drifts. That accounting is the whole subject of dry substance in syrups, and it is where most spreadsheet errors are born.
Grade choice deserves the same care as dose. Two syrups sold under the same name can differ by 20 PAC units, which at a normal dose of six to eight percent of the mix is the difference between a base that scoops cleanly at minus 13 °C and one that fights the spatula. Ask the supplier for the DE and the dry matter on the specification sheet and enter both; the label alone will not tell you which product is in the pail.

When to Switch
The swaps below assume a 1000 g base and coefficients that refer to each product as sold, water included.

Read the first two rows as a single decision. Switch to maltodextrin when the base serves acceptably but tastes thin, reads low on solids, or cannot afford more sweetness. Switch to glucose syrup when the base is stiff at the counter, needs chew, or is already at the top of its solids range and can absorb the water.
There is one case where the choice is made for you. If the recipe carries fruit purée or another wet ingredient and total solids are already at the ceiling, syrup is off the table: every gram of it brings water you have nowhere to put. Maltodextrin is the only sugar family product that adds solids without adding either water or sweetness.
The reverse case is just as common in fruit work. A sorbetto built to the standard method often lands with correct solids and a PAC still short of target, because purée contributes bulk without contributing many small molecules. Maltodextrin cannot help there at all. A DE 60 syrup, or dextrose if sweetness allows, is the only way to move the freezing curve without adding another point of sugar to the palate.
A third situation resolves itself once you separate the two questions. If the complaint is that the product melts too fast on the plate rather than that it serves too hard, neither PAC nor sweetness is at fault: the serum is thin. Chain length is what thickens serum, and maltodextrin has the longest chains on the table, so per gram of solids it is the stronger thickener. Glucose syrup thickens as well, but it arrives bundled with PAC, sweetness and water. Pick syrup when you want body and softness together; pick maltodextrin when you want body alone.
Dosage, Handling and the Ceiling
Most labs keep maltodextrin between two and five percent of the mix. Push past that and the drying, faintly pasty mouthfeel it lends at high dose starts to read as a defect rather than as body, and the product loses the clean melt that defines good gelato.
Disperse it with the other dry ingredients before hydration. Maltodextrin lumps readily when it hits warm liquid on its own, and lumps survive pasteurisation as gritty spots. Glucose syrup has the opposite handling problem: it is viscous enough that accurate weighing means warming it gently and pouring into a tared jug rather than measuring with a spoon.
Both products should be entered into the PAC calculator as sold, with their own dry matter figure, not as generic sugar. Anything else compounds the error through the total solids line as well.
