Ginger Gelato
You taste the cold before the burn, and then the warmth climbs slowly at the back of the throat, kept bright by lemon instead of turning heavy.

Nothing in the weighed list accounts for the heat, and that is by design, not an omission. The rhizome goes in as an infusion, 25 to 40 g freshly grated per kilo, steeped 30 to 60 minutes and then strained out, so gingerol and shogaol travel into the milk while the fibre stays in the sieve. No mass enters, which is why the vehicle balances as a plain milk base, and why the fat is held near 8 percent: any higher and it wraps the pungency until the spice barely registers. What you get is a slow warmth that shows up after the cold, with 8 g of lemon juice giving it an edge so it reads bright and not merely hot.
Straining costs viscosity, so 4 g of carob seed flour go back in to replace what the sieve took out. The 8 g of squeezed lemon juice are the only acidity a milk base tolerates at a safe dose, and they do real work here: ginger on its own reads hot without a cutting edge.
Fat is deliberately held near the bottom half of its window at 8.04 percent, because above that the fat encapsulates gingerol and the ginger simply disappears. The body has to come from somewhere else, so it comes from 45 g of skim milk powder, which is what carries MSNF up to 10.45 percent.

Method
Cold-start infusion, strain, still-freeze with a fork
- 1Whisk every dry ingredient together first: sugars, milk powder, stabiliser and salt. Dry-blending them stops the stabiliser clumping when it meets liquid.
- 2Warm the liquids to 40 C (104 F), then rain the dry mix in while whisking hard.
- 3Heat to 82 C (180 F) and hold for 2 minutes so the stabiliser hydrates.
- 4Chill in an ice bath to under 5 C (41 F) within 2 hours. Slow cooling is where bacteria and coarse crystals both start.
- 5Age 6 to 12 hours in the fridge under 5 C (41 F). This is when the stabiliser and the milk protein take up water.
- 6Fold the fruit in cold, after ageing. Heating it costs you the fresh aroma and nothing is gained.
- 7Freeze in a shallow metal pan 2 to 3 cm deep, breaking the crystals with a fork every 30 to 40 minutes, 4 to 6 times.
- 8Freeze firm, then temper 10 to 15 minutes in the fridge before scooping.
The balance
All six against the professional range for Milk Gelato.
Read fat and MSNF together and the design is obvious. Fat sits at 8.04 percent in a 5 to 12 window, deliberately not higher, because fat coats the gingerol and mutes exactly the compound you infused for. MSNF at 10.45 percent sits in the upper half of the 8 to 12 range, from 45 g of skim milk powder, to give the mouthfeel that the capped fat is not giving. PAC at 253.65 lands comfortably in 220 to 300 and POD at 164.16 in 135 to 200, so the tub is neither hard nor sickly. The one number to watch is lactose at 9.12 percent of the water phase, the tightest in this group, a direct consequence of that milk powder: it still passes, but do not add more powder trying to thicken a base you just strained.
The specific risk is zingibain, the cysteine protease in ginger. It hydrolyses alpha-s casein and its coagulating activity peaks right around 70 C, which is the principle behind the Chinese ginger milk curd dessert. So never stir grated ginger into a mix sitting between 40 and 70 C: it will curdle. Correct order is ginger into COLD milk, then up to 85 C fast while stirring, hold 30 seconds to denature the enzyme, off the heat, steep covered while it cools, then strain through a fine sieve and press. The lemon juice goes in afterwards, with the mix already at 4 C and under agitation, so acid and heat never attack the casein together. Mature 6 to 12 hours, because the pungent note keeps migrating during maturation.
If it goes wrong
The grated ginger met the mix somewhere between 40 and 70 C, where zingibain coagulates casein at maximum activity.
Start over with the ginger in cold milk, raise to 85 C quickly while stirring and hold 30 seconds before steeping. The enzyme is dead after that.
Either the acidity is missing or the lemon juice went in warm, or the fat crept above the 8.04 percent the sheet targets.
Add the 8 g of squeezed lemon juice with the base already at 4 C and under agitation, and keep cream at the 170 g in the sheet.
Straining removed body and the 4 g of carob seed flour were skipped or never hydrated.
Disperse the carob seed flour with the dry sugars before it meets liquid, and let it hydrate through the 85 C step. Do not compensate with more milk powder, since lactose is already at 9.12 percent of the water.
