Cocoa is nearly anhydrous and almost sugar-free, so it contributes essentially zero PAC and POD while loading the mix with ~96% solids: it raises total solids fast without lowering the freezing point. Its fiber, starch and protein bind water, which firms and can dry out the gelato, so as you add cocoa you must trim other solids (or add liquid) and usually raise sugars/dextrose to keep the mix scoopable. The 10-12% grade adds modest fat (~11g per 100g cocoa), letting you reach deep chocolate flavor before dairy fat becomes excessive. Add it to the warm base and disperse well to hydrate the starch.
Origin & background
Cocoa powder was born in 1828 when Dutch chemist Coenraad Johannes van Houten patented a hydraulic press that squeezed most of the cocoa butter out of roasted cocoa mass, leaving a defatted cake that could be milled into powder. His process also introduced alkalization ('Dutching'), which darkens color and mellows acidity.
