Soy vs Almond Milk Gelato: Which Vegan Base Wins Out?

Soy and almond are the two default vegan bases on most gelato menus, and they are not interchangeable. One carries protein that builds body on its own. The other is mostly water with a nut aroma. Choosing wrongly costs you texture that no stabilizer will give back.

The one number that decides it: protein
Strip away the marketing and the difference is protein. Unsweetened soy drink lands at roughly 3 to 3.5 g of protein per 100 ml in USDA FoodData Central. Commercial almond drink typically lands between 0.4 and 0.6 g. That is a five to seven fold gap, and it is the single biggest structural difference between the two bases.
Protein does three jobs in a frozen mix. It stabilises the air cells that give you overrun. It binds water, which reduces the free water available to grow ice crystals. And it contributes to the creamy, coating mouthfeel that plant bases are usually accused of lacking. Soy protein does all three well: glycinin and beta-conglycinin are effective emulsifiers and foam stabilisers, and soy is one of the few plant proteins considered complete in essential amino acids.
Almond drink cannot do those jobs, because there is barely any almond in it. Most commercial almond drinks are only 2 to 6 percent almonds by weight. The protein and fat of the nut are diluted almost out of existence, which is why an almond base tastes clean and light and freezes hard and icy if you do not compensate.

What each base actually delivers
The table below uses typical unsweetened commercial products. Your cartons will differ, so read your own panels, but the shape of the difference holds.

Neither reaches the 36 to 42 percent total solids a gelato mix needs, so both bases require building. The difference is how much you have to build. Soy arrives with roughly 8 percent solids and real protein, so you are topping up. Almond arrives with about 4 percent solids and no protein, so you are constructing the entire body from added ingredients.
Quick reference. Soy gives you protein and solids to build on. Almond gives you flavour and water. Budget the difference in added fat and protein, not in stabilizer.

Flavour: beany against barely there
Soy has a flavour problem and almond has a flavour advantage, and this is where the comparison reverses.
The characteristic beany note in soy comes from lipoxygenase acting on the unsaturated fatty acids in the bean, generating hexanal and related aldehydes. Heat treatment and modern deodorised soy drinks reduce it substantially, but it does not vanish, and it becomes audible in delicate flavours. Vanilla, fior di latte and light fruit bases expose it. Chocolate, coffee, hazelnut, caramel and pistachio bury it completely.
Almond drink is the opposite. It carries a faint, sweet, marzipan-adjacent note that most palates read as pleasant and neutral. It sits under vanilla and under fruit without arguing with either. If your menu is built on delicate flavours, that alone can justify choosing almond and paying for the body elsewhere. Texture and stabilizer strategy
The temptation with almond is to fix the thin body with more gum. It does not work, and it produces the chewy, slow melting defect described in why is my gelato gummy. Gums bind water, they do not add solids or protein.
For a soy base. Push fat toward 6 to 8 percent with a neutral plant fat, top up solids with your sugar blend, and run a vegan stabilizer at around 4 g per kilo. The soy protein is already doing foam work, so you rarely need more.
For an almond base. You are building from scratch. Add fat, and add protein or fibre. A point or two of pea protein isolate, or inulin for solids without sweetness, closes most of the gap. Only then set the stabilizer, at 4 to 5 g per kilo per vegan stabilizer blend.
Both bases benefit from a properly built sugar curve rather than a copied dairy one. With no lactose in either, the whole freezing point depression is yours to set, so check the result against PAC instead of assuming the dairy numbers carry over.

So which one wins
Neither, universally. The choice follows the flavour.
Choose soy when the flavour is strong enough to cover the beany note and you want the shortest path to good texture: chocolate, gianduia, coffee, caramel, pistachio, hazelnut, dark spice. Soy is also the cheaper build, because the protein you would otherwise buy is already in the carton.
Choose almond when the flavour is delicate and the base must stay invisible: vanilla, fior di latte style plant bases, fruit ripples, floral and citrus work. Accept that you will pay for it in added fat and protein, and budget for that in the recipe rather than in the stabilizer.
