Jasmine Gelato Recipe: Infusing Tea and Fresh Blossom

Jasmine is one of the few florals that survives freezing without turning soapy, but only if you extract it cold and get the species right. Here is a balanced milk base at 36.7 percent solids, a cold infusion schedule that runs during maturation, and the identification rule that matters most.

Pale, barely tinted, intensely floral. The colour should look like fior di latte and taste like nothing else.
Which Jasmine You Can Actually Use
This section is not filler. Several ornamental plants are sold as "jasmine" and some of them are poisonous, so start here before you buy anything.
The jasmine used for tea and for eating is Jasminum sambac, Arabian jasmine, the small waxy white flower that scents jasmine green tea across China and Southeast Asia. Jasminum officinale, common jasmine, is also a true jasmine and is used in perfumery and in some culinary traditions.
The ones to refuse:
- Carolina jessamine, Gelsemium sempervirens, sold as yellow jasmine. Toxic. It contains gelsemine alkaloids and has caused serious poisonings.
- Night-blooming jasmine, Cestrum nocturnum, in the nightshade family. Toxic, not a jasmine.
- Star jasmine, Trachelospermum jasminoides. Not a jasmine at all and not a food ingredient, despite the scent.
If you cannot positively identify a flower as Jasminum sambac or Jasminum officinale from a food-grade supplier, do not put it in a mix. Good jasmine tea is the safe route and it is also, for most kitchens, the better-tasting one.

Tea, Blossom, or Both
Jasmine tea is not flavoured tea. Traditional production layers green tea with fresh Jasminum sambac blossoms overnight, repeatedly, so the leaf absorbs the volatile aroma and the spent flowers are removed. Higher grades go through more scenting cycles. What you buy is green tea carrying real jasmine aroma, which means you get two things at once: the floral top note and a green tea body underneath.
That green tea body is a feature and a liability. It gives structure and keeps the flower from reading as perfume, and it also brings catechins that turn astringent and bitter if you over-extract. This is the single reason most jasmine gelato fails.
Fresh blossom, where you can source it safely, adds the indolic, almost animalic depth that dried tea alone never quite carries. Used alone it is delicate to the point of vanishing under sugar and cold. The recipe below uses tea as the backbone and treats fresh blossom as an optional finishing layer.
The Balanced Base
A lean milk base, close to a fior di latte, so the flower has room. Fat is kept at the upper end of the gelato range for mouthfeel without muffling the aroma, and MSNF is deliberately held down so lactose stays inside its solubility limit.

That last row is the one people skip. Lactose is far less soluble than sucrose, and if you push MSNF too high in a lean base it crystallises during storage and the gelato turns sandy on the tongue. Holding skim milk powder to 22 grams keeps you just inside the limit, which is why the solids gap is filled with maltodextrin instead of more powder. Run your own numbers through the balancing method if you change anything.
Quick reference. Cold-infuse 14 g of jasmine pearls per kg in the finished mix for 10 hours at 4 degrees, straining before churning. Never boil the tea in the dairy. The infusion doubles as maturation, so it costs you no extra time.

Method
1. Blend the dry ingredients. Whisk the skim milk powder, sucrose, dextrose, maltodextrin and stabiliser together while dry. Milk powder and stabiliser both clump on contact with liquid, and undispersed stabiliser shows up later as slimy streaks.
2. Warm the dairy and disperse. Combine milk and cream, bring to about 45 degrees, and rain the dry blend in while whisking. Dispersing in this window gives the stabiliser the shear it needs before it fully hydrates.
3. Pasteurise. Hold at 65 degrees for 30 minutes, or take it to 82 degrees for 30 seconds if you want the faster cycle. Either is valid; the trade offs are in the pasteurisation deep dive. No tea goes in yet.
4. Chill hard and fast. Get the mix below 6 degrees as quickly as your kit allows. A blast chiller is ideal, an ice bath works. This step is not optional here, because the tea has to meet a cold mix.
5. Cold-infuse the tea. Add 14 g of jasmine pearls per kilo of mix, cover, and hold at 4 degrees for 10 hours. This is also your maturation window, so the stabiliser hydrates and the fat crystallises while the tea extracts. Do not stir aggressively; you want extraction, not agitation.
6. Optional fresh blossom. For the last two hours, add 8 g of fresh, unsprayed Jasminum sambac blossoms per kilo. Whole, not bruised.
7. Strain. Pass through a fine mesh sieve and press the leaves gently, no more. Hard pressing squeezes out the astringent fraction you spent ten hours avoiding.

Press gently or not at all. The last squeeze out of the leaves is the astringent one.
8. Churn. Draw between minus 6 and minus 8 degrees at 28 to 32 percent overrun. Draw temperature logic is in the draw temperature guide.
9. Harden and serve. Blast to minus 18, then hold and serve around minus 12. Tempering matters more than usual with florals, because aroma release at serving temperature is already marginal.
You will recover roughly 940 to 950 g of strained mix from a 1000 g batch, because the leaves absorb four to five times their dry weight. That is a yield loss, not a balance problem: the leaves absorb mix of the same composition, so what comes through the sieve is still balanced. Only evaporation shifts the numbers, which is another reason to keep the infusion cold and covered.

The hot route, if your schedule forces it: 65 degrees, 12 minutes, strain immediately.
Green tea catechins extract faster at high temperature than the aromatic esters you actually want, so a hot infusion trades flower for tannin. Cold infusion inverts that ratio. If your production schedule forces a hot infusion, cap it at 12 minutes at 65 degrees, strain immediately, and accept a slightly duller result. When It Goes Wrong
Bitter or drying finish. Over-extraction, almost always. Either the infusion ran hot, ran long, or the leaves were pressed hard at the sieve. Drop the steep to 8 hours and stop pressing.
No jasmine at all. Under-dosed, or the tea was low grade and mostly dust. Pearls should unroll into recognisable whole leaves in water. Raise to 18 g per kilo before you conclude that the method failed.
Grey or dull colour. Usually a hot infusion oxidising the leaf, sometimes an iron-reactive pan. Cold infusion in stainless or glass keeps the base close to fior di latte white, which is what makes a single blossom on top read as a garnish rather than a rescue.
Soapy or perfumed. Too much fresh blossom, or blossom left in past the two-hour window. Floral aromatics cross from beautiful to synthetic at a surprisingly low threshold. Pull them early; you can always scent a second batch harder.
Sandy texture after a week in the cabinet. Lactose crystallisation from too much milk powder. Recheck the lactose per 100 g of water and bring MSNF back down.

Tempered to minus 12 before scooping. Straight from the blast chiller the flower simply is not there.
