Elderflower Sorbet: A Floral Summer Sorbetto Recipe

Elderflower's whole character lives in a handful of volatile terpenoids that a hot pan destroys in minutes. Cold infusion keeps them. The rest is ordinary sorbetto arithmetic: 32% solids, PAC 282, and acid added only after the mix is cold.


What elderflower actually smells of
Elderflower is the blossom of Sambucus nigra, the European black elder, a woody shrub of the Adoxaceae family found across Europe and naturalised in North America. It flowers for perhaps three weeks in late spring, and that short window is the entire reason cordial exists as a preservation format.
The aroma is not one compound but a small cluster of terpenoids, and every one of them is volatile. Gas-chromatography work on elderflower volatiles consistently puts three at the front:
- Linalool — the soft, sweet floral spine, the same molecule that carries much of the perfume of lavender and coriander seed.
- Hotrienol — the muscat-grape note, and the compound most responsible for elderflower reading as elderflower rather than as generic blossom.
- Rose oxide — present in traces, with a very low odour threshold, supplying the green, lychee-like lift you catch at the very front of the smell.
Three practical consequences follow, and they drive the whole method below.
First, all of them boil off. They are small molecules with low boiling points, so an open simmer strips the flowers of exactly what cost you a morning of picking. Second, they are more soluble in alcohol and in fat than in water, which is why elderflower liqueurs taste more concentrated than cordials at the same flower dose, and why a water-based sorbetto has to compensate with a heavier flower load. Third, much of the aroma sits in and around the pollen rather than in the plant tissue, which is why rinsing the heads under a tap is the most common way to ruin a batch before it starts.
Picking the flowers, and the parts you throw away
Identification comes first, and it is not optional. Sambucus nigra is a woody shrub or small tree carrying creamy-white, flat-topped flower heads. Dwarf elder, Sambucus ebulus, is a herbaceous plant that dies back to the ground each year, carries pinkish anthers, and is toxic. If the plant has no woody trunk, walk past it.
Then the parts. The florets are the food. The green stems, leaves and unripe berries of elder contain cyanogenic glycosides — sambunigrin and related compounds — which release hydrogen cyanide on enzymatic breakdown and are the reason raw elder plant material causes nausea and vomiting. Strip the florets off the green stalks with a fork or with your fingers, and discard the stalks. Safety aside, the green parts also taste aggressively bitter and vegetal, and even a small proportion of stem in the infusion is detectable in the finished sorbetto.
Pick on a dry morning, once the dew has gone, from heads where most florets are open and the anthers are still shedding visible yellow pollen. Heads that have begun to brown at the edges, or that smell faintly of ammonia or cat, are past their window. That note carries straight through infusion and cannot be corrected downstream.
Do not wash them. Shake each head sharply over a sheet of paper to dislodge insects, then use them within a couple of hours of picking.
Dose: roughly 20 large heads, or about 40 g of destemmed florets, per 1000 g of finished sorbetto. That is heavier than a typical cordial, deliberately. Sorbetto is eaten at around -13 °C, and cold suppresses aroma perception — you are building for a chilled palate, not for a glass of iced water.

Three ways to run the infusion
Quick reference. Cold-infuse 40 g of destemmed florets in 580 g of water for 18 to 24 hours at 4 °C, strain, then blend the strained infusion into a syrup pasteurised separately in the remaining water. Never boil the flowers.

The cold route wins on flavour, but it splits the process in two, because the mix still has to be pasteurised. The way around it is to pasteurise the sugars and stabiliser in a fraction of the water — heat to 85 °C, hold 30 seconds, chill hard — and then combine that syrup with the cold, strained, never-heated flower infusion. The heat treatment happens where the aroma is not.
Keep the infusion vessel covered. An open bowl in a fridge loses volatiles to the air and gains whatever else is in the fridge; elderflower picks up onion and cheese with real enthusiasm.
The balanced sorbetto, per 1000 g
A flower sorbetto has no fruit puree, which means no fruit solids and no fruit acid. Everything that builds body has to come from the sugar blend, so the formula sits at the upper end of the standard sorbetto balance window.

The arithmetic, for anyone checking the work. Solids are 185 + 40 + (105 x 0.80) + (45 x 0.08) + 4 + 1 = 318 g, since glucose syrup DE 38 runs near 80% dry matter and lemon juice near 8%. PAC is 185 x 1.00 + 40 x 1.90 + 84 x 0.23 + 1 x 1.78 = 282, using the standard reference values of 100 for sucrose, 190 for dextrose and 23 for DE 38 syrup, plus the small contribution of the citric acid. POD is 185 x 1.00 + 40 x 0.70 + 84 x 0.35 = 242 per 1000 g, which is the 24 quoted above on the usual per-100 g scale.
The glucose syrup is working harder here than it would in a fruit sorbetto. With no puree supplying pulp solids, it is the only thing standing between you and a mix that is simultaneously too sweet and too thin. Push its share down and sucrose has to rise to hold total solids, and POD walks straight out of range.
For the stabiliser, a locust-bean-and-guar blend at 3-5 g/kg is the default; the sorbetto-specific comparison covers when pectin earns its place instead.

Making it, step by step
- Strip and infuse. Destem 40 g of florets into 580 g of cold water. Cover, refrigerate 18 to 24 hours. Strain through a fine sieve, pressing only lightly — hard pressing extracts bitterness from whatever stem fragments got through. You will recover roughly 500 to 530 g; top up with cold water to exactly 500 g.
- Pasteurise the syrup. Combine the sucrose, dextrose, glucose syrup and stabiliser with the 120 g of plain water. Heat to 85 °C, hold 30 seconds, then chill to 4 °C over an ice bath. The flower infusion never sees the heat.
- Combine. Blend the cold syrup into the cold infusion. Do not heat the mix again.
- Age. Rest 4 to 12 hours at 4 °C so the stabiliser hydrates fully and the viscosity settles.
- Acidify. Only now stir in the lemon juice and the citric acid. The mix should taste very slightly too sharp while cold in the jug; it will read as balanced once frozen.
- Churn. Freeze to a draw temperature of -6 to -8 °C, aiming for 20-30% overrun. Sorbetto takes air poorly, and chasing volume here buys you foam, not texture.
- Harden and serve. Blast to -18 °C, then hold and serve at -12 to -14 °C.
Why the acid goes in last. Two reasons, both mechanical. Acid held at pasteurisation temperature hydrolyses sucrose into glucose and fructose — inversion — and inverted sugar has close to double the freezing-point depression of the sucrose it came from. A mix balanced at PAC 282 can drift past 300 and simply refuse to set in the case. Second, low pH interferes with the hydration of several gums during the heat step, so you lose stabiliser performance you already paid for. Adding acid cold, after ageing, avoids both.
When it goes wrong

Elderflower is worth this much care precisely because it does not forgive shortcuts. A lemon sorbetto will survive a hot infusion and a rushed rest. This one will not.
