Overrun is the air whipped into gelato during churning, expressed as a percentage of volume increase. It is the difference between a dense, spoon-coating scoop and a light, fluffy one. You do not need lab gear to measure it, only a scale and one simple ratio you can run in the kitchen.

Overrun comes down to weight: fill one container with mix, then with finished gelato, and compare.
What overrun is
Churning does two things at once: it freezes the mix and it beats in air. That incorporated air expands the volume of the finished gelato above the volume of the liquid mix that went in. Overrun is that expansion, written as a percentage. An overrun of 100 percent means the volume doubled; 30 percent means it grew by roughly a third. The air lives in tiny bubbles distributed through the frozen structure, and it is a genuine ingredient, not a defect: without some air, gelato would be a hard, icy block.
Gelato is defined partly by low overrun. Where industrial ice cream can run 50 to 100 percent, artisan gelato typically lands around 20 to 35 percent. That density is why gelato tastes more intense and reads as richer than airier ice cream at the same recipe, because each spoonful carries more actual mix and less air. The weight method
The most reliable home and lab method uses weight, because a fixed container holds a fixed volume. Weigh that container full of unfrozen mix, then full of finished gelato, subtracting the empty container each time. Since the same volume of the lighter, aerated gelato weighs less, the weight drop reveals the air. This weight-based approach avoids the mess and error of trying to measure volume directly, and it works with any cup you already own.
Quick reference. Overrun percent = ((weight of mix - weight of gelato) / weight of gelato) x 100, both measured in the same container, container weight subtracted.

Worked example
Use one cup for both measurements, and make sure you level the mix and the gelato to the same fill line each time. Suppose the empty cup weighs 40 g.
- Cup + mix: 290 g, so the mix alone weighs 250 g.
- Cup + gelato: 240 g, so the gelato alone weighs 200 g.
Now apply the formula: ((250 - 200) / 200) x 100 = (50 / 200) x 100 = 25 percent overrun.
That 25 percent is squarely in the artisan gelato range. If your number comes back near 60 or 70 percent, the machine is whipping in far more air than a dense gelato should carry, and the texture will feel lighter and melt faster. If it comes back very low, near 10 percent, the gelato may be heavy and hard to scoop straight from a cold cabinet. The method takes two minutes and gives you a repeatable number to compare batch to batch.

Where you want to land depends on the product, but most traditional gelato aims for the 20 to 35 percent band. Consistent overrun batch to batch is a sign of a well-controlled process and matters for portioning, since it links directly to portion control and cost per scoop. A shop that lets overrun wander will serve a different dessert from one week to the next, and will struggle to price a scoop accurately.
What changes overrun
Several levers move the number. Machine type is the biggest: a batch freezer with a slow dasher and open design incorporates less air than a pressurised continuous freezer, which can inject air deliberately. Draw time matters too, since longer whipping adds more air, which is one reason draw temperature and timing are watched closely; a gelato drawn too warm keeps spinning and picks up extra overrun.
Recipe plays a part. Higher fat and higher total solids stabilise the air cells and can support a touch more overrun without collapse, while a lean, watery mix holds air poorly and drains quickly. Emulsifiers and stabilisers influence how well the foam sets and stays set through storage. Fill level in the machine also counts: an underfilled or overfilled barrel changes how the dasher works the mix. If your overrun drifts between batches, look first at fill level, dasher speed, and draw time before blaming the recipe itself.
Why measure it at all
Overrun is a quality-control number. It tells you whether the machine is behaving, whether your texture will match last week's, and how your yield and food cost pencil out, because air is free volume that stretches a batch. Two gelaterie with the same recipe but different overrun will serve noticeably different desserts, one dense and intense, the other soft and light. Tracking overrun alongside serving temperature turns texture from a guess into a measurement you can repeat, defend, and improve. Write the number on the batch log next to the date and you build a record that pays for itself the first time a batch comes out wrong.
