Evaporated Milk in Gelato: Concentrated MSNF, No Sugar

Evaporated milk is whole milk with more than half its water removed, then sealed and sterilised. It carries about twice the milk solids of fresh milk, no added sugar and a gentle cooked note. In gelato it raises MSNF with less water than milk, but it always brings fat along.

What Evaporated Milk Is

In the United States the product has a legal definition. Under 21 CFR 131.130, evaporated milk is "the liquid food obtained by partial removal of water only from milk." It must contain at least 6.5% milkfat, at least 16.5% milk solids not fat and at least 23% total milk solids. It is homogenised, fortified with vitamin D (25 IU per fluid ounce), and sealed in a container and heat-processed to prevent spoilage. Emulsifiers and stabilizers are permitted optional ingredients.

That last point is what separates it from sweetened condensed milk. Condensed milk is preserved by sugar, at around 44% in the app's ingredient data. Plain evaporated milk contains no added sugar, so it has to be preserved by heat. The U.S. Dairy Export Council's milk powder manual describes the sterilisation of canned evaporated milk as "normally in the range of 116 °C (241 °F) for 15 minutes to 120 °C (248 °F) for 12 minutes."

Keeping casein stable through that much heat is the hard part of making it. Manufacturers commonly add stabilising salts such as sodium citrate or disodium phosphate, and sometimes carrageenan to limit fat separation in storage. Check the label: if carrageenan is listed, the evaporated milk brings a small dose of stabilizer into your mix.

The sterilisation also browns the milk slightly. Lactose and milk protein react during that long hot hold, which is why evaporated milk is faintly tan and tastes cooked and lightly caramelised: the same Maillard reaction that builds flavour in dulce de leche, at a much lower intensity.

Composition and Balancing Values

Quick reference. Evaporated milk (USDA FoodData Central 171276, per 100 g): water 74.0 g, fat 7.6 g, MSNF about 18.4 g, total solids 26 g. Balancing values on the app's milk-solids convention: PAC about 10, POD about 1.6, lactose about 10 g. Fat to MSNF ratio about 0.4, essentially the same as whole milk.

The evaporated milk row comes from the USDA FoodData Central entry for canned evaporated milk: 74.0 g water, 7.56 g fat, 6.81 g protein, 10.0 g carbohydrate and 1.55 g ash. MSNF is everything that is not water or fat, so 18.4 g. The other columns are the working values in the app's ingredient database.

PAC and POD follow the same rule the app uses for every dairy ingredient: milk solids contribute roughly 54.5 PAC units and 8.7 POD units per 100 g of MSNF, almost all of it from lactose. Evaporated milk adds very little softness or sweetness on its own.

Compare total solids and the concentration factor is clear. Whole milk sits at 12.5% solids; evaporated milk at 26%. That is 2.08 times the solids in the same weight.

Where It Helps and Where It Doesn't

The value of any MSNF source is how much water it drags in with the solids you want. For 10 g of MSNF:

Two things stand out. Evaporated milk carries well under half the water of fresh milk, a real gain when a recipe is already crowded with fruit, coffee or other liquids. But look at the fat column. Because it is simply concentrated whole milk, evaporated milk keeps milk's fat to MSNF ratio. It cannot raise MSNF independently of fat. Only skim milk powder, or evaporated skimmed milk, does that.

USDA lists a nonfat version too, entry 170878, at 79.4 g water, 0.2 g fat and about 20 g MSNF per 100 g. If you can buy it, it behaves like a liquid, cooked-tasting skim milk powder.

A Worked Swap: Replacing 30 g of Milk Powder

Take a 1 kg milk base that uses 30 g of skim milk powder for 28.5 g of MSNF. Replace it with evaporated milk, and keep water unchanged by taking whole milk out of the recipe.

MSNF and water land where they were, within rounding. The cost is 11.8 g of extra fat, which is also the extra batch weight. In a base built around 7% fat, that is more than a full percentage point. Take it back out of the cream, and rebalance in the app, because trimming cream changes water and MSNF slightly again.

The lesson is the same whichever way you run it: evaporated milk is a substitute for part of the milk and some of the powder, not for the powder alone.

How to Use It in Gelato

  • Cooked-milk flavours. Its caramel note suits toasted milk, dulce de leche, malt, coffee and kulfi-style bases, where reduced milk is the point.
  • Home kitchens without powder. Canned evaporated milk sits on almost every supermarket shelf, while skim milk powder can be harder to find, and a can is easy to measure in useful amounts.
  • Wet recipes. When purée or brewed coffee already fills the water budget, evaporated milk frees room for solids.
  • Not for fior di latte. A clean fresh-milk base does not want a cooked note.

Lactose rises with MSNF whichever source supplies it. Evaporated milk contributes about 10 g of lactose per 100 g, so pushing MSNF with it brings the same sandiness risk as any other milk solid.

Treat an opened can like fresh milk: refrigerate it and use it within a few days. Shake or stir the can before weighing, since fat can rise during storage.
