Dulce de Leche Gelato Recipe: Caramelized Milk Base

Dulce de leche is not a flavouring you stir into a finished base. It is roughly 70 percent solids, half of it sugar and a lot of it milk powder in disguise, so it rewrites the balance sheet the moment it goes in. Build the base around it and the result is extraordinary.

Dense, deeply caramel, and clean on the finish. The salt is not optional.
What dulce de leche actually is
Dulce de leche is milk and sugar reduced slowly until water leaves and browning takes over. The colour and the flavour do not come from caramelised sucrose. They come from the Maillard reaction between lactose, which is a reducing sugar, and the amino groups on milk protein. That is why dulce de leche tastes of milk and butterscotch rather than of burnt sugar, and it is the same chemistry described in the Maillard reaction in gelato.
The international reference point is the Codex standard for dulce de leche, CODEX STAN 331-1999, which caps moisture at 30 percent. That single figure is the one that matters to you: a compliant dulce de leche is about 70 percent solids, which makes it one of the most concentrated ingredients you will ever put into a gelato base.
Working backwards from a traditional make gives a usable composition. Reducing about one litre of whole milk with 300 g of sugar to roughly 610 g of finished dulce de leche leaves you with:

A good dulce de leche ribbons off the spoon and holds its shape briefly. Thin, pourable versions carry more water and less flavour.
Treat those numbers as a starting assumption and check them against your supplier's declared values, because commercial products vary. The important consequence does not change: 280 g of dulce de leche brings roughly 137 g of sugar, 42 g of MSNF and 17 g of fat with it. Ignore that and you will overshoot sugar badly and put the mix into lactose crystallisation territory.
Quick reference. Dulce de leche is about 70 percent solids: roughly half sugar, one seventh MSNF. Subtract it from your sucrose and from your milk powder before you weigh anything else.

The recipe: 1000 g of dulce de leche gelato mix
Note what is missing from this list. There is no skim milk powder, because the dulce de leche is already supplying the milk solids, and there is very little added sucrose for the same reason. Scale linearly.

The 40 g of dextrose is doing structural work rather than sweetening work. Dulce de leche is heavy on sucrose, and sucrose alone leaves this mix scoopable but sluggish out of the cabinet. Dextrose depresses the freezing point harder per gram, so it buys softness at service temperature without adding perceived sweetness, which is exactly what a caramel flavour needs. The salt is not seasoning in the ordinary sense. Two grams per kilo sits below the threshold where most people taste salt directly, but it sharpens the caramel and cuts the flat, cloying quality that dulce de leche gelato falls into without it.
The lactose problem nobody warns you about
This is the failure mode specific to this flavour. Dulce de leche is concentrated milk, so it carries a large MSNF load, and about half of MSNF is lactose. Lactose is the least soluble of the common sugars, and when its concentration in the water phase gets too high it crystallises into gritty particles that people describe as sandy.
The classic guideline is that MSNF should stay below roughly 17 percent of the water in the mix. Run the arithmetic on the recipe above: total solids are 373 g, so the water phase is 627 g, and 17 percent of that is about 107 g. The recipe carries 96 g of MSNF, comfortably inside the limit.
Now imagine swapping 25 g of the milk for skim milk powder out of habit, the way you would in a fior di latte. MSNF climbs to about 118 g while the ceiling itself falls to roughly 103 g, because the powder adds solids and therefore removes water. That is a gelato which will turn sandy within a week of storage. This is the single most common way dulce de leche gelato goes wrong, and the mechanism is covered in sandy gelato texture.
Method
- Prepare or source the dulce de leche. To make it, combine one litre of whole milk with 300 g of sucrose and a small pinch of sodium bicarbonate. The bicarbonate raises pH, which accelerates Maillard browning and keeps the milk from curdling as it concentrates. Hold at a bare simmer, stirring often, until reduced to about 610 g and deep amber. Cool and weigh.
- Build the base. Warm the milk and cream to about 40 °C, then rain in the sucrose, dextrose and stabilizer while whisking so the gums disperse rather than clump. The blend itself is discussed in stabilizer blend recipe.
- Pasteurize. Take the base to 85 °C and hold briefly, or hold at 65 °C for 30 minutes, following the combinations in the pasteurization deep dive.
- Add the dulce de leche off the heat, whisking until fully dissolved. It is already a cooked product and there is nothing to gain from cooking it again.
- Chill fast, then mature at 4 °C for 4 to 12 hours. Maturation lets the proteins and gums hydrate fully, and it is where this base gains most of its body. See maturazione.
- Churn and draw between minus 6 and minus 8 °C, per the draw temperature guide.
- Blast to minus 18 °C, then temper to about minus 12 °C for service.

Reducing milk and sugar to dulce de leche takes roughly two hours and cannot be rushed. Higher heat gives you scorch, not speed.
Troubleshooting

If the finished gelato is soft rather than hard, the diagnosis runs the other way and why gelato is too soft covers it.

Finished and tempered. A properly balanced dulce de leche cuts cleanly and holds a sharp spatula edge.
Variations worth making
Salted. Take the salt from 2 g to 4 g per kilo and it stops being background and becomes the point. That crosses into the territory of salted caramel gelato, which starts from caramelised sucrose rather than reduced milk and tastes noticeably darker as a result.
Condensed milk shortcut. Sweetened condensed milk is the same family of ingredient at a different stage of concentration, and a base built on it is covered in condensed milk gelato. It is faster but flatter, because it has not been through the browning step.
Ribboned. Hold back 60 g of dulce de leche, warm it slightly to loosen it, and layer it into the tub as it comes off the machine. Recalculate the base without that 60 g or the mix will read short on solids.
