Both ingredients sell themselves as a way to raise milk solids-not-fat. They are not interchangeable. Skim milk powder is almost pure MSNF; sweetened condensed milk is roughly one fifth MSNF and nearly half sugar. Swapping one for the other by weight rewrites your whole sugar and freezing curve.

What the two ingredients actually are

Start with the legal identity, because it pins the numbers down.

Sweetened condensed milk is milk concentrated by evaporation with sucrose added as the preservative. In the United States, 21 CFR 131.120 requires at least 8% milkfat and at least 28% total milk solids. The European Union sets the same two floors in Annex I of Council Directive 2001/114/EC. Commercial cans typically land close to 8% fat, 21% MSNF, 44% added sucrose and 27% water.

Skim milk powder — nonfat dry milk on a US label — is skim milk with the water taken out and nothing added. 21 CFR 131.125 caps moisture at 5% and milkfat at 1.5%; Directive 2001/114/EC applies the same ceilings to dried skimmed milk. What remains is MSNF at roughly 96% of the bag.

The lactose row comes from the standard serum-solids breakdown used in Marshall, Goff and Hartel's Ice Cream: MSNF is about 54.5% lactose, 37% milk protein and 8% minerals. That ratio is fixed, so every gram of MSNF you add — from any source — carries the same lactose load.

The MSNF math: why one for one fails

Quick reference. To put 60 g of MSNF into a 1000 g mix you need about 62 g of skim milk powder, or about 286 g of sweetened condensed milk — and the condensed milk drags in roughly 126 g of sugar, 24 g of fat and 77 g of water along the way.

That is the entire comparison in one line. Skim milk powder is a near-pure solids dose: 60 divided by 0.96 is 62 g, of which barely 2 g is anything other than MSNF. Sweetened condensed milk is only 21% MSNF, so hitting the same target needs 286 g — more than a quarter of the finished mix — and 126 g of that is sucrose.

For context, most artisanal gelato bases run 16–22% total sugars and 8–11% MSNF. Reaching your MSNF target through condensed milk alone would spend 12.6 percentage points of a 16–22 point sugar budget before you add a single gram of sucrose, dextrose or invert sugar. It is a sugar decision wearing a dairy costume, and it is the reason the two ingredients sit in different drawers in a professional lab.

What condensed milk really adds

Three things arrive together, and only one of them was on your shopping list.

Sugar, at full strength. The added sucrose carries a POD of 100 and a PAC of 100 by definition — it is the reference against which every other sweetener is scored. Push condensed milk past a token dose and the mix gets sweeter and softer at the same time.

Fat you did not budget. At 8% fat, 286 g of condensed milk brings 24 g of milkfat, which is 2.4 points of fat in a 1000 g mix. On a base already sitting at the top of its fat range, that is enough to force cream back out of the formula, and pulling cream removes MSNF too — so the correction feeds back into the problem you were trying to solve.

Colour and cooked flavour. Condensed milk is heat-treated during manufacture and its lactose is a reducing sugar, so it arrives with Maillard notes already developed and browns further on pasteurisation. That is a feature for dulce de leche and a defect for a clean fior di latte. What milk powder really adds

Skim milk powder is the surgical option: it moves MSNF and almost nothing else.

Inside that MSNF, the roughly 37% milk protein is the part doing the structural work. Protein binds free water, stabilises the air cells whipped in during churning, and gives the body the chew that separates a dense gelato from a watery one. Less free water also means smaller ice crystals at the same draw temperature, which is why raising MSNF is the standard first move for a base that tastes thin or icy rather than reaching straight for more fat.

The limit is lactose. Lactose is only weakly soluble, and once its concentration in the water phase of the mix exceeds saturation it crystallises during storage, producing the gritty defect known as sandiness. Practitioners cap MSNF as a fraction of the water in the mix rather than of the total, which is exactly the calculation walked through in our MSNF calculation guide.

Lactose also carries a quiet freezing-point cost. Its molar mass is 342 g/mol, identical to sucrose, so gram for gram it depresses the freezing point just as hard — PAC 100 — while delivering only about a sixth of the sweetness. Raise MSNF and the mix gets softer without getting sweeter, which is useful when you want it and a nuisance when you do not.

Finally, powder has to be hydrated. Dumped into warm liquid it lumps, and un-dispersed protein never does its job. Add it to cold liquid with shear, then heat — the same discipline described in the stabiliser hydration guide.

The professional default is skim milk powder, for a plain reason: it isolates one variable. Condensed milk is a flavour ingredient that happens to contain MSNF, and it belongs in a recipe where you actually want that flavour — not in a base you are trying to balance.

A worked swap on a 1000 g base

Take a simple white base at 8% fat, 10% MSNF and 18% sugars, built the standard way with whole milk, cream and 62 g of skim milk powder. Now suppose you want a third of that MSNF from condensed milk for flavour.

A third of 100 g MSNF is 33 g. At 21% MSNF that is 157 g of condensed milk — which also delivers 69 g of sucrose, 13 g of fat and 42 g of water. To keep the base on target you cut your added sugar by 69 g, pull roughly 40 g of cream to give back the fat, and take about 42 g of milk out to make room for the water — then drop the powder from 62 g to about 34 g, because the cream and the milk you just pulled took roughly 6 g of MSNF out with them. Only then does the balance sheet close.

That is four compensating edits for one substitution, which is the honest reason these ingredients are not swapped casually. Running it through our balancing method — or any sheet that tracks fat, MSNF, sugars and total solids simultaneously — turns it into arithmetic instead of guesswork. Do it by eye and the mix will usually land too sweet and too soft, because the sugar that arrived uninvited is also the sugar depressing the freezing point.
