Pear Sorbetto Recipe: Balancing a Sorbitol-Rich Fruit

Pear sorbetto looks easy and behaves badly. Ripe pears carry a fructose-dominant sugar profile plus sorbitol, so the fruit alone pushes anti-freezing power near the ceiling before you add a single gram of sugar. Balance it with dextrose, the way most fruit sorbets are built, and it never sets.

Why Pear Sits at the Top of the PAC Scale
Quick reference. Sorbetto di pera runs 50% pear puree, sucrose 16–17%, glucose syrup DE38 5–6%, and no dextrose at all. Targets: total solids 30–34%, sugars 26–30%, PAC 280–340, POD 24–28. Draw at −8 °C, serve at −12 °C.


USDA FoodData Central lists raw pear at 83.96 g water and 9.75 g total sugars per 100 g, split roughly 6.4 g fructose, 1.9 g glucose and 0.8 g sucrose. That ratio matters far more than the total. PAC is a colligative property — it tracks the number of dissolved molecules, not their mass — so fructose, at 180.2 g/mol, depresses the freezing point about 1.9 times as hard as sucrose at 342.3 g/mol, gram for gram. A fruit whose sugar is roughly 70% fructose therefore carries almost twice the freezing-point punch of a fruit whose sugar is mostly sucrose. Then there is sorbitol. Pears are among the richest common fruits in this sugar alcohol, typically 1–3 g per 100 g depending on cultivar and ripeness. Sorbitol rarely shows up in a "total sugars" figure, but a refractometer reads it as soluble solids and the freezer certainly feels it: at 182.2 g/mol its PAC lands around 190, effectively the same as fructose, while its sweetening power is only about 60 on the POD scale. It is close to pure antifreeze with very little flavour payback — which is exactly why pear reads less sweet than its numbers suggest.
Add the two effects together and a 50% pear puree contributes roughly 105 PAC points to a 1000 g mix before you weigh out any added sugar. Mango at the same dosage sits nearer 90, strawberry nearer 75. That head start is the entire problem, and it is why sorbetto that will not firm up is the first failure mode you will meet here.
Choosing and Preparing the Pears
Variety moves the numbers. Williams (Bartlett) is the workhorse: aromatic, 11–14 Brix at eating ripeness, widely available fresh and as commercial puree. Abate Fetel, the Italian benchmark and an IGP-protected product in Emilia-Romagna and Veneto, is more perfumed and slightly sweeter. Conference holds acidity better and gives a cleaner finish. Doyenné du Comice is the most aromatic of the four but the most fragile and the most expensive. Avoid Asian pear varieties in sorbetto — they are crisper, lower in aroma, and higher in water.
Ripeness beats variety. The fruit should yield to gentle pressure at the neck, not the belly, and smell floral from arm's length. Underripe pears are starchy, thin and stubbornly bland; overripe pears turn mealy and drop their acidity, leaving a flat sorbetto that reads as sugar water.
Two processing constraints are specific to pear. First, stone cells: pear flesh contains clusters of lignified sclereids that survive a blender and register on the palate as grit. Blend hard, then strain through 1 mm mesh — this is the same defect discussed in grainy sorbetto, arriving from the fruit rather than from ice. Second, enzymatic browning: pear is rich in polyphenol oxidase and visibly darkens within minutes of cutting. Add 0.1% ascorbic acid to the puree the moment it comes off the blender and hold it cold; the mechanism is covered in polyphenol oxidase in fruit gelato. Left unprotected, a pale ivory sorbetto turns a dull beige before it reaches the batch freezer.
Check the puree with a refractometer and record the reading. Anything from 11 to 15 Brix is workable, but the recipe below assumes 12. Brix and total solids are not interchangeable — the refractometer sees dissolved solids only, and pear's fibre and stone cells do not register.

The missing ingredient is the point. Almost every fruit sorbetto formula reaches for dextrose to lift PAC and keep the scoop soft. Pear needs the opposite intervention. Substituting the 60 g of DE38 syrup with 60 g of dextrose takes PAC from 311 to roughly 385 — far past the 340 ceiling — and produces a mix that stays slack in the blast cabinet and slumps in the case within an hour. Glucose syrup DE38 does the job dextrose cannot: at PAC 67 and POD 50 it adds solids and chew while diluting the average freezing power per gram of sugar. If your puree reads above 13 Brix, drop sucrose by 1% and add the same weight in water. Below 11 Brix, add 1% sucrose and remove the equivalent water rather than reaching for dextrose.
Production Process, Step by Step
- Syrup. Combine water, sucrose, glucose syrup and the stabiliser blend, the latter pre-mixed dry with about five times its weight in sucrose so it disperses instead of clumping. Heat to 85 °C with constant agitation and hold two minutes — long enough to pasteurise the syrup and to hydrate the gums properly.
- Cool. Drop the syrup to 4 °C as fast as the equipment allows.
- Combine cold. Stir the raw pear puree and lemon juice into the cold syrup. Never heat the puree with the syrup: cooked pear loses its floral top notes and gains a stewed, tinned character.
- Age. Rest four hours minimum at 4 °C to hydrate the stabiliser fully. Overnight is better.
- Churn. Draw at −8 °C. The mix will feel looser at draw than a mango or strawberry sorbetto at the same temperature; that is the pear's PAC, and it is expected.
- Harden. Blast to a core of −18 °C, then hold at −14 °C. Skipping the blast step is the most reliable way to get coarse ice in a high-PAC sorbetto.
Troubleshooting a Pear Sorbetto That Will Not Set

Pear rewards restraint. Get the sugar spectrum right and it is one of the most elegant sorbetti on a counter — pale, floral and clean. Reach reflexively for dextrose and it is a puddle.
