A sorbetto that will not hold a scoop is usually carrying too much anti-freezing power and too few solids at the same time. Both are arithmetic, both are fixable, and the fruit is very often the culprit that nobody checked.

Soft Is Not the Same Fault as Fast-Melting

Before touching a recipe, name the defect precisely, because three different problems get reported as soft.

A slushy sorbetto never reaches a solid state at all. It comes out of the batch freezer wet, will not build a clean peak and slides down the tub wall. That is a freezing point problem: too much dissolved sugar, or the wrong sugars.

A collapsing sorbetto scoops correctly for the first hour and then slumps in the case. That is usually a temperature or a solids problem rather than a sugar-blend one.

A weeping sorbetto is separating, which looks soft but is not: liquid is draining out of the structure and pooling. That is sorbet separation and it has its own fix. If the texture is coarse rather than wet, you are looking at a grainy sorbetto instead.

The Three Numbers That Decide It

Quick reference. A sorbetto that scoops cleanly at minus 12 to minus 14 degrees C wants PAC between 270 and 290, total solids between 28 and 34%, and POD between 24 and 28. Above PAC 300 it will read wet no matter which stabiliser you used.

PAC and total solids fail in different ways and the cure is different for each. Excess PAC keeps water liquid at service temperature, so the product is genuinely under-frozen. Low solids means there is not enough dissolved and suspended material to give body to whatever did freeze, so the product is watery even when it is cold enough. A batch can be wrong on one axis, or, as in the worked case below, on both.

The reason the fruit deserves suspicion is that fruit sugars are not interchangeable. Freezing point depression depends on the number of dissolved molecules, so fructose and glucose, at 180.16 g/mol, depress it nearly twice as hard per gram as sucrose at 342.3 g/mol. Fruits differ enormously in how their sugars split, and the difference is large enough to move a recipe out of the window on its own.

Sugar splits from USDA FoodData Central, weighted at PAC 100 for sucrose and 190 for glucose and fructose. A pear sorbetto and a peach sorbetto built to the same total sugar are more than forty PAC points apart before you add a single gram from the bag. That is why a recipe that behaves in peach season goes slushy on pears, and why choosing purees is a technical decision and not a purchasing one.

A Mango Batch, Diagnosed

Take a mango sorbetto built per kilo as 450 g puree, 145 g sucrose, 50 g dextrose, 5 g stabiliser and 350 g water. It draws wet and never firms up.

USDA FoodData Central puts raw mango at 13.7 g of sugars per 100 g, split roughly 7.0 g sucrose, 4.7 g fructose and 2.0 g glucose, which weights out to a PAC index of about 144. So 450 g of puree brings 61.6 g of sugar carrying about 89 PAC points. Add the bag:

Thirty-nine points above the ceiling. Now the other axis. Raw mango is about 83.5% water, so the puree contributes roughly 74 g of solids, and the total is 74 + 145 + 50 + 5, or 274 g. That is 27.4% solids, just under the floor. The batch is wet for two independent reasons.

The fix is one substitution and one addition. Replace all 50 g of dextrose with sucrose: PAC falls by 50 times the difference between the two indices, or 45 points, landing at 284. Sweetness moves in the right direction too, from POD 25.7 to 27.0, still inside the window. Then swap 20 g of the water for maltodextrin DE19, which scores PAC 0 and POD 10. Solids rise to 29.4%, PAC does not move at all, and sweetness barely does.

Two changes, both axes fixed, and the recipe still tastes of mango rather than of sugar. Run anything more complicated than this through the PAC calculator rather than by hand.

Lowering PAC Without Losing Sweetness

The constraint in a soft sorbetto is that it usually still needs to taste sweet, so the correction cannot simply be less sugar. These are the moves, in the order worth trying.

  • Dextrose out, sucrose in. The single biggest lever. Each 10 g swapped removes 9 PAC points and adds 2.5 POD points, so it firms the product and sweetens it slightly at the same time.
  • Cut inverted sugar and fructose hard. Both score PAC 190. In a base that is already soft they are pure liability, whatever they do for flavour.
  • Add maltodextrin DE19 for solids. PAC 0, POD 10, pure structure. The cleanest way to lift total solids without touching the freezing curve. Two to three per cent of the mix is a normal working dose.
  • Check the alcohol. Ethanol depresses the freezing point far more aggressively than any sugar, and a generous pour of liqueur can single-handedly stop a batch setting. See alcohol and PAC.
  • Do not reach for more stabiliser. Gums manage free water and ice crystal growth. They do not raise the freezing point, so a wet batch treated with extra gum becomes a gummy wet batch. Dose it properly and leave it alone: choosing a stabiliser for sorbetto.

Verify the fruit before you rebuild anything. A refractometer reading takes seconds and tells you what this week's lot actually delivered, and Brix against total solids explains how to turn that number into a correction. Watch the purchase spec too: purees sold pre-sweetened at ten parts fruit to one part sugar carry about 9% added sucrose, and switching between sweetened and unsweetened lots moves both axes at once.

What to Do With the Tub in the Case

You cannot remove sugar from frozen product, so the immediate options are thermal and short-lived.

  1. Drop the cabinet 1 to 2 degrees C. Buys a service, at the cost of hardening everything else in the case.
  2. Blast the tub down and hold it colder, serving it in short runs rather than leaving it out.
  3. Re-batch it. Melt the sorbetto, add sucrose and maltodextrin to hit the targets, and re-freeze. You lose some aroma and recover the batch.
