Double Cream vs Heavy Cream in Gelato: Fat and MSNF

Double cream and heavy cream are not two names for the same carton. UK double cream must reach at least 48% milk fat; US heavy cream only 36%. Swap one for the other gram for gram and the fat from cream rises by a third or falls by a quarter. Here is the conversion.

Cream names are regulated, and the thresholds differ by country. Both sets of rules below define minimums, not exact values.

US heavy cream, also sold as "heavy whipping cream", may be pasteurised or ultra-pasteurised and may contain emulsifiers and stabilizers. UK double cream sits a full twelve points above it. The nearest UK equivalent of heavy cream is whipping cream, at 35%.

Many European creams are labelled with their exact fat percentage, which is the most useful label of all. Wherever you buy, read the number on the carton, not the name.

Composition and Balancing Values

The fat difference is obvious. The quieter difference is in the other two components. Cream is milk fat suspended in what is essentially skim milk, so the non-fat part of cream carries the same share of milk solids as skim milk, about 9%. More fat leaves less room for that serum, so double cream has less water and less MSNF than heavy cream.

Quick reference. Per 100 g, estimating MSNF as 9% of the non-fat part: heavy cream at 36% fat has about 5.8 g MSNF and 58 g water; double cream at 48% fat has about 4.7 g MSNF and 47 g water. To replace 100 g of heavy cream, use 73 g of double cream plus 27 g of whole milk.

PAC and POD come from the milk solids alone, on the app's convention of about 54.5 PAC and 8.7 POD units per 100 g of MSNF. Cream brings almost no anti-freezing power or sweetness either way. What it brings is fat, and fat is the variable you need to protect in a substitution.

A carton can legally sit above its minimum, so if the label states the fat percentage, use that figure instead of 36 or 48.

Swapping Heavy Cream for Double Cream

This is the common direction for a UK kitchen following a US or Italian recipe. Take 200 g of heavy cream in a 1 kg mix: 72 g fat, 11.5 g MSNF, 116.5 g water. Solve for double cream plus whole milk at the same total weight and the same fat.

A straight gram-for-gram swap adds 24 g of fat to the kilo, a jump of 2.4 percentage points that can push a balanced 8% base past 10%. The corrected version matches fat exactly and lands within 0.2 g on MSNF and water. The rule scales: for any amount of heavy cream, use 73% of its weight as double cream and make up the rest with whole milk.

Swapping Double Cream for Heavy Cream

The reverse direction is the one that catches US bakers using British recipes. You cannot match the fat of double cream with the same weight of heavy cream. You need more heavy cream and less of something watery, which in most bases is the milk.

For 200 g of double cream (96 g fat): use 274 g of heavy cream and remove 74 g of whole milk. Fat stays at 96 g and the batch weight is unchanged, MSNF drops by about 0.2 g and water rises by about 0.2 g. If the recipe has less than 74 g of milk to remove, the base cannot reach the original fat with heavy cream alone. Add a little butter or accept a leaner gelato and rebalance the sugars.

Reading a US Label Without a Percentage

US cartons rarely print a fat percentage, and the nutrition panel can mislead you. The reference serving for fluid cream under 21 CFR 101.12 is one tablespoon, 15 mL. Under 21 CFR 101.9, fat is rounded to the nearest 0.5 g below 5 g and to the nearest whole gram above it.

A tablespoon of cream at 36% fat holds about 5.4 g of fat, which the label shows as 5 g. Divide 5 by 15 and the carton appears to be 33% fat, below the legal minimum for heavy cream. It is not; the rounding hides the real number. Trust the product name for the minimum, or ask the dairy for the specification.

What the Difference Does to Texture

Fat is what gives gelato richness and slows melting, and most balanced milk bases sit between roughly 6 and 9% fat, as covered in the ideal fat percentage guide. Push well past that and the texture becomes heavy and coats the mouth, and the mix is more prone to churning into small butter grains in the freezer. That last defect is partial coalescence gone too far: the same fat destabilisation that builds structure in the right amount, as explained in the fat crystal network.

A properly homogenised mix resists it better than one made with unhomogenised double cream, but no process fixes a recipe that is simply carrying too much fat. The swap tables above keep that from happening.
