Cornstarch in Gelato: The Sicilian Thickener Explained

Sicilian gelato has been made without egg yolks for a very long time, and cornstarch is one of the reasons it works. It thickens, it holds water, and it does none of the other things a yolk does. Understanding that gap is what separates a clean Sicilian base from a pasty one.

What cornstarch actually does in a mix

Cornstarch is a polysaccharide, roughly 92% dry matter with the balance as moisture (USDA FoodData Central lists cornstarch at about 8 g of water per 100 g). Of that dry matter, normal dent maize starch is around 25-28% amylose and the rest amylopectin. Amylose is the linear fraction and the one that does most of the gelling; amylopectin is highly branched and mostly contributes viscosity.

In a gelato base it does exactly one thing well: it binds free water. Once the granules absorb water and swell, that water is no longer available to migrate and form large ice crystals during hardening and storage. The effect on perceived body is real, and it is why a Sicilian base can hit a satisfying density with modest fat.

The PAC row is not an approximation. Freezing point depression is a colligative property, so it depends on the number of dissolved particles. Starch is an enormous polymer, so per gram it contributes a vanishingly small number of particles compared with a simple sugar. It moves total solids, not hardness.

The Sicilian context: why no eggs

The eggless tradition is not a shortcut. In the Sicilian style, the flavour of the pistachio, the almond or the citrus is meant to sit in front, and yolk brings a custard character that competes with it. Northern Italian practice leans on egg yolks for structure and richness; the difference is set out in Sicilian versus northern gelato.

Removing the yolk removes an emulsifier, though, and that is the trade the recipe has to pay for. Without lecithin, fat destabilisation during churning is less controlled, which typically shows up as a slightly less dry, less structured scoop. Sicilian bases compensate in two ways: they usually run lower fat, where the missing emulsifier matters less, and they often carry a small amount of a modern stabiliser blend alongside the starch.

Quick reference. Cornstarch replaces the thickening function of egg yolk, not the emulsifying function. Budget for that separately.

Dosage, gelatinisation and the cooking step

Artisan practice generally lands between 1.5% and 3.0% of the mix, which is 15 to 30 g per kilogram. Below roughly 1.5% the thickening is barely perceptible; above 3% the base starts to read as pudding rather than gelato, and the defect described in why gelato turns gummy becomes the likely outcome.

The temperature step is not optional. Native maize starch granules are inert in cold water. They only swell and release their thickening power once heated through the gelatinisation range, which for normal maize starch sits at roughly 62-72 C. Below onset, nothing happens; the granules simply settle out and you get a thin base with grit at the bottom of the vat.

That range fits comfortably inside a normal gelato pasteurisation cycle, which is why the two steps are usually combined. Practical sequence:

  1. Disperse the starch cold, into a small portion of the milk, before it meets anything warm. Starch dropped into hot liquid lumps instantly and the lumps never fully hydrate.
  2. Add the slurry to the main base while it is still below about 50 C.
  3. Bring the whole mix up through pasteurisation, stirring, and hold. See pasteurisation deep dive for the time and temperature combinations.
  4. Cool fast, then age. Starch bases benefit from the same ageing rest as any other base.

Where cornstarch fails: retrogradation and freeze-thaw

This is the part most recipes leave out. After gelatinisation, amylose chains slowly realign into ordered regions as the paste cools. That process, retrogradation, expels water. In a bread it means staling; in a frozen dessert it means a base that turns short and pasty and can weep liquid on thawing.

Native maize starch has poor freeze-thaw stability for exactly this reason: it carries a meaningful amylose fraction, and amylose retrogrades quickly. Waxy maize starch, which is close to pure amylopectin, holds up much better through freeze-thaw cycles, and so does tapioca starch, which is also low in amylose.

Three practical consequences:

  • A cornstarch base is at its best in the first days. It is not the right choice for a flavour you intend to hold in the cabinet for a fortnight.
  • Any heat shock in the display case accelerates the problem, because every partial thaw and refreeze is another freeze-thaw cycle.
  • If you need shelf life, either move to a waxy or tapioca starch, or pair a lower dose of cornstarch with a hydrocolloid such as locust bean gum that does not retrograde at all.

The choice is rarely either-or. A common modern Sicilian compromise keeps cornstarch at the low end of its range for the traditional mouthfeel and cereal-clean flavour, and adds a small stabiliser blend to carry the freeze-thaw load the starch cannot.
