Chestnut is the contrarian of the nut world: barely any fat, loaded with starch. That single fact rewrites how you balance a chestnut gelato. Get it wrong and the base turns gummy or icy; get it right and castagna rewards you with a dense, warm, autumn-brown scoop. Here is the formula and the method.

Why chestnut behaves unlike any other nut
Reach for hazelnut or walnut and you are working with fat. Roasted hazelnuts carry roughly 61 g of fat per 100 g and walnuts around 65 g, which is why their pastes act like liquid butter in a base (USDA FoodData Central). Chestnut is the mirror image. A roasted European chestnut (Castanea sativa) holds only about 2 g of fat per 100 g and around 53 g of carbohydrate, most of it starch (USDA FoodData Central).
That means chestnut cannot enrich a gelato the way a nut paste does. What it brings instead is solids and starch. Starch matters: when it is heated in water it gelatinizes and thickens, behaving like a mild natural stabilizer (Goff & Hartel, Ice Cream, 7th ed., 2013). So a chestnut base is prone to gumminess if you overload the purée, and prone to iciness if you treat chestnut as though it added fat and skimp on sugars.

Flavour is the other half of the story. Raw chestnut tastes starchy and flat; the roasted, sweet-earthy character you want comes from cooking. Toasting or roasting the chestnuts before you purée them develops the nutty, caramel notes through the Maillard reaction, and a whisper of salt sharpens them. Sweet marron-type chestnuts give a rounder, dessert-friendly flavour than ordinary field chestnuts, which is why Italian castagna and marrons glacés traditions prize them.

Run through a balance sheet and this lands near 39 percent total solids, about 5.6 percent fat, roughly 17 percent sugars (near 16–17 percent POD), and MSNF close to 9 percent — inside the classic gelato windows of 32–42 percent solids, 4–9 percent fat and 16–22 percent sugar (Goff & Hartel, 2013; Caviezel, Il Gelato Artigianale). Exact figures shift with your purée, so weigh, do not eyeball.
Reading the balance
Three numbers do the heavy lifting, and chestnut pulls each one differently.
Total solids decide body and scoopability. Chestnut is a solids engine: its starch and fibre push total solids up without adding sweetness. That is a gift, because you reach a dense total-solids target without loading sugar. Overdo the purée, though, and the same starch turns the scoop pasty.
Fat stays deliberately modest. Gelato lives at a lower fat level than ice cream, and chestnut adds almost none, so the 95 g of cream is doing nearly all the work. If you want more richness, add cream, not more chestnut, and keep an eye on your fat percentage.
Sugars control how hard it freezes. Because chestnut brings starch rather than sugar, a chestnut base can drift too firm if you under-sugar it. Dextrose here does double duty: it sweetens less than sucrose but depresses the freezing point more per gram, so it keeps the scoop soft. If PAC and POD are new to you, they are simply the anti-freezing and sweetening power of your sugar blend.

One quiet trap: milk solids. Push MSNF much past 10–11 percent and the lactose it carries can crystallise as the gelato ages, leaving a sandy mouthfeel (Goff & Hartel, 2013). Method, step by step
- Ready the purée. Use unsweetened chestnut purée, or simmer peeled chestnuts until soft and blend smooth with a little of the recipe's milk. Unsweetened keeps your sugar math honest.
- Warm the dairy. Combine milk, cream and skim milk powder and heat to about 65 °C, whisking so the powder hydrates without lumps.
- Add sugars and stabiliser. Premix the stabiliser with a spoonful of the sucrose so it disperses, then add it with the rest of the sucrose and the dextrose. Pasteurise: either flash to 82–85 °C, or hold 65 °C for 30 minutes (Goff & Hartel, 2013).
- Fold in the chestnut. Whisk the purée into the hot base and blend until completely smooth. Keep it hot a couple of minutes so the starch fully hydrates; that is what gives clean body rather than raw-starch cling.
- Chill and age. Cool the mix quickly to 4 °C and rest it 4–12 hours. Ageing lets proteins and stabiliser hydrate, and the chestnut flavour rounds out.
- Churn. Freeze in a batch freezer, drawing at roughly −8 °C. Aim for gelato-style overrun of about 20–35 percent — dense, not fluffy (overrun explained).
- Harden and serve. Blast-freeze, then temper and serve at −11 to −13 °C, the range where gelato is soft and elastic rather than brick-hard.

A last word on serving. Chestnut carries autumn and winter flavours beautifully, so it pairs with a thread of honey, a dusting of cocoa, or a spoon of candied chestnut. Because the base is only moderately sweet, those garnishes read clearly rather than fighting the gelato. Keep the finished tubs well wrapped; the starch-rich body resists the worst of freezer iciness, but it is not immune to it.
Chestnut gelato is one of the clearest lessons in the whole craft: balance is not about copying a cream-heavy recipe, it is about reading what the ingredient actually contributes.
