Chestnut Paste in Gelato: Starch, Not Fat, Is the Key

Every other nut paste on your shelf is mostly fat. Chestnut is mostly starch and water, and a mix balanced as if it were hazelnut will come out of the batch freezer dry, short and vaguely chalky. Treat it as a starch ingredient and it becomes the best autumn flavour you make.

Chestnut is not a nut, nutritionally speaking
Botanically chestnuts are nuts. Compositionally they belong with potatoes. USDA FoodData Central gives roasted European chestnut roughly 41 g water, 53 g carbohydrate, 3 g protein and only 2 g fat per 100 g. Compare that with hazelnut at about 61 g fat and 5 g water, and the gap stops being academic.
Of that 53 g of carbohydrate, around 11 g is sugar and 5 g is fibre. The rest, roughly 37 g, is starch. That single number drives every decision below.
Quick reference. Chestnut paste per 100 g: about 37 g starch, 11 g sugar, 2 g fat, 41 g water. Hazelnut paste per 100 g: about 61 g fat, no starch. Swapping one for the other at the same dose changes fat, solids and body all at once.

Roasting before pureeing is what gives the paste its depth. Boiled chestnut tastes flat by comparison.
Sweetened or unsweetened: check before you buy
This is the mistake that ruins the first batch. Two very different products sit on the same shelf.
Unsweetened purée, sold as purée de marrons or passata di castagne, is cooked chestnut and nothing else. Use the USDA figures above and balance normally.
Sweetened cream, sold as crème de marrons or crema di marroni, is typically around half sugar by weight, usually sucrose and glucose syrup, often with vanilla. Dosing it as if it were purée adds a large uncounted block of sugar, which lifts PAC and gives you a gelato that will not firm up.
If your supplier sheet does not state the sugar content, weigh the sugar in from the nutrition panel and subtract it from your sucrose before you do anything else. Everything in how to balance a gelato recipe still applies; you just have to count the sugar that came hidden in the ingredient.
What the starch does to your mix
Cooked chestnut starch is already gelatinised, and it will thicken your base again the moment the pasteuriser passes about 65 °C. Three things follow.
First, the mix gets viscous fast. A base that measured fine cold can turn heavy at 85 °C and drag on the pasteuriser paddles. Add the paste at the end of the heating stage rather than at the start.
Second, starch competes with your stabiliser. If you are already running a full stabiliser blend, cut it by roughly a third when chestnut paste passes 10% of the mix, or the result is gummy rather than creamy.
Third, gelatinised starch retrogrades. Over days in the cabinet the amylose chains re-associate and release water, which is the classic route to a sandy texture and to visible ice recrystallisation. Chestnut gelato has a shorter honest shelf life than most flavours. Make it in small batches and turn it over inside a week.
There is a fourth effect that is easy to miss on the balance sheet. Starch contributes almost nothing to freezing point depression, because it is a polymer and freezing point depression counts molecules rather than mass. So chestnut paste can push your total solids to the top of the range while leaving the antifreeze number untouched. The mix reads correct on paper and comes out of the batch freezer harder than expected, because the extra solids stiffen the frozen phase without any compensating softening.
The practical answer is to look at solids and antifreeze as two separate lines rather than one. If chestnut paste has taken solids to 40% and the scoop is stiff at service temperature, do not remove chestnut. Add a small dose of dextrose or invert sugar in place of an equal weight of sucrose. That buys softness without touching sweetness much, and it leaves the flavour dose intact.
Balancing around it
The paste brings solids but almost no fat, so a straight substitution leaves the mix lean.

Working doses run 10 to 15% of total mix for unsweetened purée. Below 8% the flavour disappears behind the dairy. Above 18% the texture turns pasty and the gelato reads as chestnut pudding.
Because the paste is bland-sweet and mineral rather than aromatic, chestnut gelato benefits from a little support. Vanilla rounds it, a small dose of rum lifts it, and a pinch of salt makes the roast character legible. Where the good paste comes from
Italy separates castagne from marroni, and so do the protected designations. Marroni cultivars give a single unsegmented kernel with a pellicle that peels cleanly, which is why they cost more and why they purée smoother.
Several are protected under EU quality schemes: Marrone del Mugello IGP in Tuscany, Marrone di San Zeno DOP on Lake Garda and Castagna di Montella IGP in Campania. A protected designation is not a guarantee of paste quality, since the protection covers the raw chestnut rather than the processed purée, but it does tell you the cultivar and the growing region, which is most of what determines flavour.
For a first purchase, buy unsweetened, buy roasted rather than boiled if you have the choice, and taste it neat before it goes anywhere near a mix. Chestnut paste oxidises and older stock tastes cardboardy in a way no amount of vanilla will hide.

Correctly balanced, the colour stays pale and the body reads dense rather than gummy.
