Mint is dosed for aroma, not for solids or sweetness. Because fresh leaves are ~85% water and carry almost no sugar, their effect on PAC and POD is effectively zero, so they do not shift freezing point or perceived sweetness; treat them as a small water addition. The most common method is a hot infusion of the leaves in the milk/cream base (then strained), which extracts menthol-rich oils without pulp; blanch-and-blend or a few drops of natural mint oil are alternatives for stronger, greener results. Since infused leaves are usually removed, compensate any water they leave behind and correct total solids with milk solids or sugars.
Origin & background
The two culinary mints are spearmint (Mentha spicata) and peppermint (Mentha x piperita). Peppermint is a natural sterile hybrid of watermint (Mentha aquatica) and spearmint, formally described by Linnaeus in 1753; it was commercialized in England around Mitcham in the 18th century, giving rise to the classic 'Mitcham' peppermint.
