Labneh in Gelato: Strained-Yogurt Tang and High Solids

Labneh is what Greek yogurt becomes if you keep straining. It arrives in the lab as a dense, sharply acidic, lightly salted dairy at roughly a quarter total solids, and that salt is the part most balancing sheets quietly get wrong.

What Labneh Is, and How Far It Is Strained

Quick reference. Labneh is yogurt strained to about 25% total solids, roughly 10% fat and 10% protein, usually salted at 0.5 to 1%. Use 20 to 30% of mix weight. Never heat it: caseins destabilise below pH 4.6. Count its salt as PAC, because gram for gram salt depresses the freezing point about twelve times harder than sucrose.

Labneh is the strained yogurt of the Levant, made by hanging set yogurt in cloth until enough whey has drained off to leave a spoonable, almost cheese-like dairy. Strain longer and you get a paste firm enough to roll into balls and store under olive oil, sold as labneh mkhabbal. There is no single specification: straining time is a matter of house practice, so two tubs from two producers can differ by four or five points of total solids.

The straining is the whole story. Removing whey removes water, and with it the soluble fraction dissolved in that water: lactose, whey proteins, and some minerals. What stays behind is concentrated, casein-dominant, and acidic. Compared with a plain yogurt base, labneh gives you far more solids per gram of water you have to freeze, which is exactly what a dairy gelato wants.

Composition: Where the Solids Actually Sit

USDA FoodData Central puts plain whole-milk yogurt at about 88% water, 3.3% fat, 3.5% protein and 4.7% carbohydrate, and whole-milk Greek yogurt at about 81% water, 5.0% fat, 8.8% protein and 4.0% carbohydrate. Full-fat labneh continues that trend to roughly 75% water, 10.5% fat, 9.5% protein and 4% carbohydrate, plus about 1.4% ash including added salt, for total solids near 25%. Those figures follow from a straightforward mass balance: fat and casein are retained in full while lactose, whey protein and minerals leave with the whey, so reaching 25% solids means draining roughly three parts yogurt to one part labneh. Treat the labneh figures as a representative lot rather than a standard, and verify against your supplier's declaration.

Two consequences follow for the balance. First, total solids arrive cheap. At 25% of mix weight, labneh contributes about 6.4 points of total solids on its own, which is why a labneh gelato can hit the 37 to 40% window with noticeably less skim milk powder than a milk-and-cream base would need.

Second, lactose does not scale with the solids. Straining carries lactose out in the whey, so labneh is proportionally lower in lactose than the yogurt it came from. That buys headroom against the sandy texture that lactose crystallisation causes at high MSNF, but it also means labneh contributes less freezing-point depression per gram of solids than you might assume. The gap has to be closed with dextrose rather than with more dairy.

The Salt Nobody Counts

Labneh is salted. Most spreadsheets treat it as a yogurt and ignore that, and the error is not small.

Salt depresses the freezing point on colligative grounds, meaning what matters is the number of dissolved particles rather than their identity. Sodium chloride has a molar mass of 58.4 against sucrose's 342, so a gram of salt brings about six times as many molecules, and each one dissociates into two ions. Gram for gram, salt is therefore roughly twelve times as powerful a freezing-point depressant as sucrose.

Run the numbers on a real mix. Labneh at 1% salt, used at 25% of the mix, puts 0.25% salt into the batch. On the reasoning above that behaves like roughly 3 points of added sucrose in PAC terms, with none of the sweetness. Ignore it and your gelato draws softer than the sheet predicts and scoops slack in the showcase. Account for it and you simply pull about 3% of the sucrose back out, which also leaves room to raise POD with a little inverted sugar if the tang needs rounding.

The practical rule: ask your supplier for the salt figure, or taste against a known unsalted strained yogurt and assume 0.8% if you cannot get a number. Unsalted labneh exists and removes the problem entirely, but it is harder to source outside the Levant.

Working Labneh Into a Mix

Labneh goes in cold, at the end, exactly like Greek yogurt. Its pH sits near 4.0 to 4.5, and caseins destabilise below their isoelectric point of 4.6, so direct heating curdles it on contact. Pasteurise the milk, cream, sugars and stabilizer as a separate base, hold 85 °C for 30 seconds, crash-cool below 4 °C, then whisk the cold labneh in. Sieve if the lot is at all grainy.

Because labneh is stiffer than yogurt, it does not disperse by whisking alone. Slacken it first with a portion of the cold base, working it to a smooth cream before adding the rest, or you will find pale lumps surviving all the way into the mantecatore and reading as chalk in the finished scoop.

The 20 to 30% window is where labneh behaves like an ingredient rather than a stunt. Above it, the combination of low pH and very high casein starts producing the slightly separated, granular body that low-pH dairy systems drift toward, and no amount of stabilizer recovers it. A 0.4% blend of locust bean gum and guar gum is standard; carrageenan at 0.02 to 0.04% is worth adding at the top of the range specifically to hold the caseins.

Where Labneh Beats Greek Yogurt

Use labneh when you want the tang to carry a savory partner. Its salt and its higher solids let it stand up to olive oil, za'atar, black pepper or a date paste ripple without the flavor collapsing into sweetened dairy, which is what happens when you try the same thing on a Greek yogurt base at 55% and end up raising sugar to compensate.

The classic pairings translate directly to the showcase: labneh with honey and toasted sesame, labneh with olive oil and flaked salt, labneh with sour cherry, labneh with fig. All four work because the base is already savory-adjacent rather than a dessert waiting for fruit.

Where Greek yogurt still wins is cost and consistency. Labneh is a smaller-volume product with more variation between producers, and if your recipe depends on hitting 25% total solids exactly, a lot-to-lot swing of four points is a real production problem. The honest compromise many shops land on is a yogurt gelato base with 10 to 15% labneh added for lift, which gets most of the character with far less variance.
