How Much Stabilizer Does Gelato Need? Dosage by Base

Most gelato recipes list a stabilizer without saying how much. The honest answer is a range, not a number: roughly 0.1 to 0.5 percent of the mix, tightened by what the base already gives you. This guide turns that range into working doses for six common bases.

What a stabilizer actually does in gelato
A stabilizer does not make gelato thick. It makes gelato stable. The hydrocolloids in a blend bind free water in the unfrozen phase, raise the viscosity of the serum around the ice crystals, and slow the migration of water that turns small crystals into big ones during storage. That distinction decides the dose. If your base already carries plenty of fat, milk solids and egg yolk, most of the free water is already spoken for and you need very little gum. If your base is fruit puree and water, almost none of it is bound, and you need more.
The four variables that set the dose are:
- Fat. Fat globules physically obstruct crystal growth and carry flavour. See ideal fat percentage for gelato.

- Total solids. The higher your total solids, the less free water there is to control.
- Storage abuse. A display cabinet opened four hundred times a day needs more protection than a home freezer.

The working envelope: 0.1 to 0.5 percent of the mix
Across the ice cream literature, stabilizer usage sits between 0.1 and 0.5 percent of mix weight, which is 1 to 5 grams per kilo. Commercial gelato blends, which are usually a gum system plus an emulsifier plus a dextrose or skim milk powder carrier, are sold with a recommended dose in the upper half of that band precisely because the carrier dilutes the active gums.
Two consequences follow, and both are missed constantly.
The dose on the sachet is for the blend, not for the gum. A blend dosed at 5 g/kg may contain only 1.5 g/kg of actual hydrocolloid, the rest being dextrose and emulsifier. If you switch from a commercial blend to pure locust bean gum at the same 5 g/kg, you will triple the effective gum load and the result will be rubbery.
Regulatory ceilings sit far above craft doses. In the European Union, thickeners such as locust bean gum (E 410), guar gum (E 412) and pectin (E 440) are authorised in edible ices at quantum satis under Regulation (EC) No 1333/2008, so the law is not what limits you. In the United States, guar gum (21 CFR 184.1339) and locust bean gum (21 CFR 184.1343) are affirmed GRAS with maximum use levels set per food category, and carrageenan is regulated as a food additive under 21 CFR 172.620. The limit that matters in practice is texture, not compliance.
Quick reference. Blends: 3 to 5 g/kg of finished mix. Pure single gums: 1 to 2.5 g/kg. Never carry a blend dose over to a pure gum.

Dosage by base: six starting points
The table below gives starting doses for a typical commercial stabilizer and emulsifier blend, expressed per kilo of finished mix. These are starting points to dial in against your own cabinet and your own overrun, not fixed constants.

Two notes on the extremes. A custard base at 12 percent yolk can often run at the bottom of its range or below it, because yolk is doing the job you would otherwise buy in a sachet. Reading the signs of under and over dosing
You do not need a rheometer to know you are off. The product tells you, and it tells you at three different moments.
At 24 hours, in the cabinet. Under dosed gelato slumps at the edges and starts to weep a thin syrup at the base of the pan. Over dosed gelato holds a sharp cut edge for hours and looks glossy in a plasticky way rather than a creamy way.

At day three. This is the real test, and the one most producers skip. Under dosed gelato that tasted fine on day one turns coarse and sandy on day three as ice recrystallisation does its work. A correct dose keeps the crystal population small across the whole shelf life, not just at extraction.

How to dial in your own dose in three batches
Pick one flavour and one base. Do not change anything else, including your ageing time and your hydration temperature, which has to be high enough for the gums you are actually using.
- Batch one, the midpoint. Run the middle of the range from the table. Extract, blast chill, then taste at 24 hours and at 72 hours.
- Batch two, minus 20 percent. If batch one was chewy or slow melting, drop the dose by a fifth. If it coarsened by day three, go up instead.
- Batch three, confirm. Repeat the winner once to prove it was the dose and not the day.
