Gianduja Gelato Balancing: Nut Fat Plus Chocolate Fat

Gianduja is the only flavour on a gelato counter that asks you to balance three different fats at once. Hazelnut oil stays liquid at freezer temperature, cocoa butter stays rock hard, and only milk fat behaves the way a gelato recipe assumes fat behaves. Treat them as one number and the batch goes wrong.

What Gianduja Legally Is

Quick reference. Target total fat 12–13%, of which milk fat 5% minimum. Hazelnut paste 7–9%, dark couverture 6–7%. MSNF 8–9%, total solids 40–42%, PAC 230–255, POD 16–18. Lower PAC than plain chocolate, because the hazelnut oil is already softening the structure.

The name comes from Turin. Confectioners there began cutting scarce cocoa with locally abundant hazelnuts during the Napoleonic Continental Blockade, and by the 1850s Michele Prochet was grinding roasted hazelnuts into cocoa paste as a standing product rather than a wartime substitute. Caffarel presented the wrapped gianduiotto in 1865, named after Gianduja, the Piedmontese carnival mask.

The European Union later fixed the term. Directive 2000/36/EC, Annex I, defines gianduja nut chocolate as a product made from chocolate with a minimum 32% total dry cocoa solids, including at least 8% dry non-fat cocoa solids, blended with finely ground hazelnuts at between 20 g and 40 g per 100 g. Gianduja nut milk chocolate takes 15–40 g of hazelnuts per 100 g alongside a minimum 10% dry milk solids. Those ratios are a good starting sanity check for a gelato too: if your hazelnut is below a fifth of the combined nut-and-chocolate weight, you are making chocolate gelato with a hint of nut, not gianduja.

Three Fats, Three Different Behaviours

This is the part that catches people out. A gianduja gelato at 12.4% total fat is not a rich, creamy 12.4% — it is a moderately structured 5% with 7.4% of fat that does something else entirely.

Hazelnut lipid is roughly 78–83% oleic acid, with around 10% linoleic and only 7–9% saturated fatty acids between palmitic and stearic. That composition puts its melting point far below freezer temperature: hazelnut oil is liquid at −14 °C. Liquid oil contributes no crystalline network, does not participate in partial coalescence, and actively softens the frozen structure. Push it too high and the product turns slack and greasy, and can weep oil in the display case.

Cocoa butter is the mirror image. Dominated by three symmetrical triglycerides and melting sharply around 34 °C, it is fully solid at service temperature and adds hardness without adding creaminess. The mechanism is worked through in cocoa butter vs. milk fat.

Milk fat sits between them and is the only one doing structural work — melting gradually across the whole eating range, coalescing partially during churning, and stabilising the air cells.

The two non-dairy fats partly cancel each other out, which is exactly why gianduja is workable at all. Hazelnut oil softens what cocoa butter stiffens. The balance holds only if you keep track of the ratio rather than the total.

Choosing the Hazelnut Paste

Use 100% hazelnut paste with nothing added — no sugar, no vegetable oil, no lecithin. Sweetened pasta nocciola wrecks your sugar accounting before you start, and the sugar in it is invisible on the label percentage you are working from. Origin matters more here than in most flavours. Tonda Gentile delle Langhe, protected as Nocciola Piemonte IGP, is the Piedmontese benchmark: round kernel, thin skin that releases cleanly on roasting, and the deep roasted-nut aroma the flavour is named for. Turkish Giresun hazelnuts are the workhorse alternative and perfectly good. Whatever the origin, the roast level decides the flavour: a light roast gives a green, milky nut character that disappears under chocolate, while a medium-dark roast at around 140–150 °C for 20 minutes gives the toasted depth that stands up to couverture.

Paste from freshly roasted nuts is around 60–62% fat, which is the figure to use in your spreadsheet. Nut pastes also separate on standing, so stir the drum thoroughly before weighing — taking the oil off the top of an unstirred drum is one of the most common causes of a batch that will not set. Note how low the POD sits. Gianduja should not taste sweet; the roasted nut and the cocoa carry the flavour, and sugar above POD 18 flattens both. The couverture already contributes about 25 g of sucrose per kilo of mix, which is why the added sucrose is well under what a fior di latte would need.

The Three Adjustments That Actually Matter

Cut MSNF before you cut anything else. Nut paste and couverture arrive as almost pure solids, so total solids climb fast and the water phase shrinks. Lactose crystallises out when MSNF exceeds roughly 16–17% of the water phase, and the result is the gritty defect described in sandy gelato texture. With total solids at 41.6% the water phase here is 584 g, so 88 g of MSNF is 15.1% of it — inside the limit, but with less headroom than a plain dairy base would have. Adding more milk powder to chase body is the wrong move.

Keep PAC below plain chocolate. A dark chocolate gelato usually sits at 260–280 to offset the hardness of its cocoa butter. Gianduja does not need that, because the hazelnut oil is already liquid at service temperature and softening the structure from the inside. Carrying a chocolate recipe's PAC straight over is the most common reason a gianduja batch slumps; if yours is soft in the case, that is where to look before touching the stabiliser.

Emulsify deliberately. Free hazelnut oil in a system already carrying cocoa butter is prone to oiling-off during a long service. A small dose of mono- and diglycerides holds the oil in the emulsion; lecithin alone is generally not enough at this fat level.

Add the paste and the melted couverture to the base after pasteurisation, at around 60 °C, and homogenise or blend hard. Age four hours minimum. Draw at −8 °C, and expect the mix to look looser than a chocolate base at the same temperature — the hazelnut oil never freezes, and it never will.

Holding Gianduja in the Case

Gianduja is more fragile in service than its richness suggests, and for a specific reason: the liquid oil fraction gives it no margin. A case running warm at −11 °C rather than −13 °C will show slumping in gianduja long before the same drift bothers a fior di latte, because the only fat resisting the change is the 5.2% that is actually crystalline.

The nut fraction also ages badly on display. Hazelnut lipid is over three-quarters oleic acid with a further tenth linoleic, which makes it far more oxidation-prone than milk fat or cocoa butter. Roasted paste that has been open for weeks carries rancid notes that the chocolate hides at first and then stops hiding. Buy paste in quantities you turn over inside a month, keep the drum sealed and cool, and rotate the pan rather than topping it up. A gianduja that has sat three days reads dull and slightly cardboard-like, and no adjustment to the balance will recover it.
