Gelato Not Sweet Enough? Fix It Without Making It Icy

A base can carry 26% sugar and still taste of nothing. Sweetness is not a weight, it is a property of the particular sugars you chose, and the usual reflex of tipping in more sucrose fixes the flavour by wrecking the texture. There is a cleaner move.


Sweetness Is a Ratio, Not a Weight
Every gelataio who has ever chased a flat base has done the same thing first: added sugar. It works, briefly, and then the batch draws soft, slumps in the case and melts on the spade. The reason is that sugar does two unrelated jobs in a frozen mix, and adding more of it turns both dials at once.
The first job is taste. The second is freezing point depression, which is a colligative property: what matters is the number of dissolved molecules, not which molecules they are (Goff and Hartel, Ice Cream, 7th ed.). A gram of dextrose puts roughly twice as many molecules into solution as a gram of sucrose, because their molar masses are 180.16 and 342.3 g/mol. That is why the Italian trade tracks the two jobs on two separate indices.
POD, potere dolcificante, scores sweetening power against sucrose at 100. PAC, potere anticongelante, scores anti-freezing power the same way. A base tastes flat when its POD is low, regardless of how much sugar is sitting in it.
The Sugar That Sweetens and the Sugar That Only Freezes
Look at what the common sugars actually do, and the problem becomes obvious.

A base built on dextrose, glucose syrup and maltodextrin, which is exactly what happens when someone has been fighting a hardness problem, can be loaded with sugar solids and still land under POD 16. Meanwhile a spoonful of dairy brings 40 to 45 g of lactose per kilo that scores 16 and is easy to forget entirely.
A Worked Correction on a Fior di Latte
Quick reference. Gelato should land at POD 16 to 22, measured in sucrose-equivalent grams per 100 g of mix. Below 16 it reads flat and hollow; above 22 it turns cloying and buries delicate flavours. Total sugar weight tells you nothing on its own.

Take a fior di latte that tastes of cold milk and nothing else. Per kilo of mix it carries 90 g sucrose, 40 g dextrose, 70 g glucose syrup DE38, 20 g maltodextrin and roughly 44 g of lactose out of the milk and the skimmed milk powder. USDA FoodData Central puts whole milk at about 4.8 g of sugars per 100 g and nonfat dry milk at about 52 g, so 600 g of milk plus 30 g of powder gets you there.
Multiply each weight by its POD index and add up:
Sucrose 90 x 1.00 = 90.0
Dextrose 40 x 0.75 = 30.0
Glucose DE38 70 x 0.50 = 35.0
Maltodextrin 20 x 0.10 = 2.0
Lactose 44 x 0.16 = 7.0
164.0 points -> POD 16.4
Total sugar solids: 264 g per kilo, or 26.4% of the mix. That is a lot of sugar producing a barely acceptable POD. The base is not under-sugared. It is under-sweetened.
Now the surgical fix. Swap 25 g of the dextrose for fructose. Both score PAC 190, so the freezing curve does not move by a single point, but fructose scores POD 173 against dextrose's 75:
25 g x (1.73 - 0.75) = +24.5 points -> POD 18.9

The Five Levers, and What Each Costs
Two levers raise sweetness for free: fructose in any recipe, and trehalose wherever it is already in the blend. Everything else trades sweetness against texture, so pick the trade you can afford. Figures are per 10 g swapped, per kilo of mix.

Two cautions. Fructose is hygroscopic and browns readily, so keep it under about 3% of the mix and taste before committing a whole batch. And inverted sugar, at POD 130 and PAC 190, is the blunter version of the same idea: it lifts sweetness well but drags the freezing point with it, which is fine only if the base was firm to begin with.

When the Numbers Are Right and It Still Tastes Flat
Sometimes POD lands at 19 and the spoon still says no. At that point the fault is in perception, not in the balance sheet, and there are four usual causes.
The cabinet is too cold. Sweetness perception falls as temperature falls, which is exactly why gelato served at -11 to -13 degrees C reads more intense than an American ice cream held at -18 (Goff and Hartel, Ice Cream, 7th ed.). Before rebalancing, probe the product and read our note on what temperature to serve gelato. Two degrees is often the entire problem.
Acidity is suppressing it. Sweet and sour suppress each other on the palate. A yoghurt, citrus or passion fruit base needs a higher POD than a fior di latte to arrive at the same perceived sweetness, and pushing acid up in search of brightness will quietly flatten the sugar.
There is no salt. A trace of salt, roughly 0.5 to 1 g per kilo, suppresses bitterness and lifts perceived sweetness without adding a gram of sugar. It is the cheapest correction available and it is covered in salt in gelato.
Overrun is too high. Air is not sweet. A whipped base delivers less mix, and therefore less sugar, per spoonful than a dense one, so the same recipe reads weaker at 45% overrun than at 30%. Measure it before touching the sugar: see gelato overrun explained.
Aroma matters too. Vanillin and other familiar sweet aromas raise perceived sweetness on their own, which is why a scrape of good vanilla can rescue a base that the numbers say is fine. Choose a vanilla with a full aromatic profile rather than a thin one.
