Date Syrup in Gelato: Deep Flavour, High Free Sugars

Date syrup arrives with a reputation for being gentle. Chemically it is nothing of the sort: it is close to pure invert sugar with a dark toffee flavour bolted on. Used with that in mind it makes a superb winter gelato. Used as a health swap it wrecks the freeze.

Silan, dibs, date molasses. One ingredient, many names, and a sugar profile that behaves like invert syrup.
What date syrup is made of
Date syrup is dates, water and time. The fruit is soaked, pressed and the extract reduced until it holds around 70 to 78 Brix. Nothing is added and nothing is inverted at the factory, because the fruit did the inverting itself while ripening on the palm.
USDA FoodData Central data for medjool dates shows why: of roughly 67 g of sugar per 100 g of fruit, glucose and fructose sit almost level, near 34 g and 32 g, with sucrose under 1 g. Concentrate that and you get a syrup that is monosaccharide from top to bottom. A typical commercial date syrup lands near 25 g water, 34 g glucose, 33 g fructose and a remainder of fibre, organic acids and minerals.
That mineral fraction is not trivial. Dates carry roughly 700 mg of potassium per 100 g, and in a concentrated syrup it reads on the palate as a faint savoury edge behind the caramel. It is part of why date gelato tastes more complex than a caramel gelato at the same sugar level.

The inversion happens on the palm. By the time the fruit is pressed, the sucrose is already gone.
The numbers: less sweet, much softer
Two scales govern this. POD measures sweetening power against sucrose at 100. PAC measures freezing point depression, which counts molecules rather than sweetness.
Weight the sugars: 33 g of fructose at a coefficient of 173 gives 57, and 34 g of glucose at 75 gives 26. Date syrup lands near POD 83. On the antifreeze side both sugars are monosaccharides and both score 190, so 67 g of them gives roughly PAC 127.
Quick reference. Date syrup: POD 83, PAC 127. Sucrose: 100 and 100. Swap sucrose for date syrup one for one and you lose about 17% of the sweetness while gaining about 27% of the softening.

That gap is the entire practical problem. Bakers swap date syrup for sugar at parity and nothing bad happens, because a cake does not have to be scoopable at minus 14 °C. A gelato does. Push date syrup past a quarter of the sugar blend and the mix will not set properly in the cabinet, exactly the failure mode described in why sorbetto is too hard running in reverse.
How much to use

In a dairy base that means roughly 5 to 9% date syrup on total mix weight. Compensate by dropping an equivalent amount of dextrose or invert sugar rather than sucrose, since those are the ingredients date syrup is actually replacing on the PAC line. If you have room in the recipe, raising sucrose slightly recovers the lost sweetness without adding antifreeze.
Water matters too. A quarter of the syrup's weight is water, so 80 g of date syrup brings 20 g of water into the mix. That has to come off the milk, or total solids drop and the texture turns thin and icy.
Flavour, colour and pairing
Date syrup is dark, and it will take a white base to a mid brown. Plan for it rather than fighting it.
The flavour is deep caramel with dried fruit behind it and a slight bitterness at the finish. It does not taste like sugar and it will not disappear into a delicate flavour. Good partners are the ones that meet it at the same weight: tahini, cardamom, coffee, dark chocolate, roasted nut pastes such as walnut or pecan. It will bury vanilla, pistachio and most fruit.
Because the syrup is already dark and cooked, do not add caramelised sugar on top. The two flavours occupy the same register and the result reads as burnt rather than layered.
Heat, storage and handling
Unlike honey, date syrup has no aroma to protect from a pasteuriser. It is a cooked product already, so it can go into the vat with the other ingredients and be held at 85 °C without complaint.
Its viscosity does slow dissolution, so weigh it into warm milk rather than dropping it into cold. Below 20 °C it turns stubborn and will streak the base if the pasteuriser is not agitating well.
One thing worth being straight about: date syrup is a free sugar. The WHO 2015 guideline on sugars intake explicitly counts sugars naturally present in syrups and honey as free sugars, and in the United States 21 CFR 101.9 requires them to be declared as added sugars. It is a better flavour ingredient than sucrose. It is not a lower-sugar one, and it does not make a gelato no added sugar.

At 20% of the sugar blend the colour is unmistakable and the scoop still holds.
