You already tried this once. It came out like a brick.

Gelato is a foam: ice crystals, fat, air and unfrozen syrup. What you taste as creamy is the syrup that never froze. What you taste as icy is a crystal big enough for your tongue to find, which starts around 50 microns.
Sugar is what keeps that syrup liquid. Get the sugars right and roughly a third of the water is still liquid at serving temperature, which is why properly balanced gelato scoops soft while a tub of sweetened cream sets like a rock.
This is also why gelato, specifically, survives a home kitchen better than ice cream does. It carries less fat and far less air by design, so the two jobs a machine performs matter less here than they would for a churned American ice cream.

Do I really not need a gelato machine?+
You do not. Part 2 compares five ways to freeze without one, honestly, including how much work each takes and how close each gets. The one the book recommends by default needs a freezer and a food processor. It also tells you which flavours are hardest without a machine instead of pretending they are all equal.
Do I need a scale?+
Yes, and this is the one place the book will not compromise. A 1 g kitchen scale costs less than this book. Weighing 4 g of stabiliser with a teaspoon is guesswork, and stabiliser is where guesswork shows up first.
Are the ingredients hard to find?+
Most recipes are milk, cream, sugar, milk powder and one flavour ingredient. Some use dextrose and locust bean gum, which are cheap online but not in every supermarket. Part 5 has a substitution table that says what to use instead and exactly what it costs you in texture.
Is this AI-generated filler?+
The recipes are not. Every one was balanced in the app's own engine against a 255-ingredient composition database, and each prints its eight values so you can verify them yourself in the free calculator. The photography is generated imagery, and we would rather tell you that than let you find out.
